One of my favorite easy dishes is Macaroni and Cheese Lasagna.
You cook a box of Macaroni and Cheese. Brown some ground beef and then add a jar of spaghetti sauce. Then layer the macaroni, spaghetti sauce, and shredded mozzarella cheese in a baking dish. Then bake until the cheese is melted. It's so yummy.

If you like a little spice (its not bad, truely) this is a good one.
Beef Roast (or pork if you prefer)
1 can Rotel tomatoes w/ green chiles
1 can green chiles
Put in a crockpot for 8-10 hours. Shred with a fork, stuff into tortillas with all the fave fixings... GOOD stuff!

I would say that making a baked egg with meat and cheese baked in it is easy and great. I do this a lot. Just add 4 eggs cheese and ham or turkey together and let it bake on about 300 degrees for about 15 minutes. It tastes really good this way.

I think making things in the crock pot is just about the easiest thing that you do. While it might not be super quick...you can let these things cook while you are at work and then come home to a hot meal waiting for you. In the winter, that's awesome. Here is a pretty simple recipe for BBQ Beef. You can use this to make sandwiches or serve it over rice.
Crock Pot Barbecue Beef
Ingredients:
1 1/2 pounds boneless round steak (cubed)
1 cup ketchup
1 cup favorite barbecue sauce
2 tablespoons honey
1 package Lipton Onion Soup Mix
1 cup beef broth
Directions:
In a large bowl mix all ingredients together. Transfer to crock pot. Cover and cook on low for approximately 8 hours.

Id say that my favorite Quick dish is TACOS.....YUM! It only takes like 15-20 min to cook up the taco meat. Sometimes we make it into nachos, burritos, or a taco sald. But this is my favorite.
