Does anyone have a frugal recipe for egg salad?

We're trying to cut back on expenses, so that we can save money for more important things. And, so I'm doing lots more home cooking. One of our favorite dishes is egg salad. But, I'm kind of bored with the regular variety that I've been making for the last few years. It doesn't have the same zip that it did before. So, I'm looking for a brand new egg salad recipe that can be made for minimum dollars. Could you please share your best egg salad recipes? Do you have any other egg dishes that you would like to serve as well? Thanks!

I was going to suggest the same recipe basically as the other person. I think hard boiled eggs and mayo is the most common way and the cheapest way (becuase who doesn't always have eggs and mayo on hand!) to make egg salad. I usually also had a little mustard (Very little as I don't really like it) and some paprika because it gives it that deviled egg taste. Two great places to find recipes also is www.allrecipes.com as they have many many versions of different types of meals and www.kraftfoods.com. As you like frugal living I don't know if I've suggested it to you before but Kraft foods is great. They have this thing called "Express Checkout" where you can basically have a weeks (5-day week) worth of food with only ONE bag of groceries. I'd call that frugal living. One week, One Bag! Technically it's only 4 days as the last day is always a suggestion of Pizza, but still even 4 meals with one bag of groceries I think is pretty good. That is very frugal and a very original idea. I guess I was looking also for some variations of the traditional egg salad recipe, like maybe something with an oriental or Indian flavor. I will check out the links you posted. Perhaps they will have something new. Thanks again.

I checked out Express Checkout link and it's just what I was looking for overall. Mostly, I'm interested in thrifty meals, not just egg salad. I've just always thought eggs were some of the only cheap dishes available. After visiting the Express Checkout I am happy to report that there are many other frugal options. Many thanks to you!

Well I hope those links help you with some recipes even if not Egg Salad. I personally like my egg salad pretty plain so I'm not sure of the other things to add but like I said All Recipes especially has many different types of the same recipe. And Kraftfoods is just overall good for frugal recipes in general.

I also love egg salad. I like to make mine the same way my mom makes deviled eggs, since I love those so much too. I make egg salad the standard way, hard-boiled eggs, mayo (I use Helmans...it's what I like the best, but any brand will do). Then I add salt, pepper, and ....the secret ingredient, a bit of powered mustard. This is probably best done to taste. I found found that you really need to use powdered mustard. The stanard condiment kind makes the egg salad a bit too soupy. I also add a touch of papricka if I have it around. I hope you like this!

Thanks for those wonderful ideas. I have always wondered how to deal with the soupy nature of egg salad. It makes it very difficult to serve on bread as sandwiches. Glad there is an alternative. Looking forward to trying this one.

Hi. One good egg salad is; boiling your eggs to hard and done, peeling them, cutting them into halves... Put those boiled peeled eggs into a salad bowl, chop and add some parsley. Mix a bit of curry powder into some mayo and also add to the bowl of eggs, with salt and pepper... This is a tasty curried egg salad...

beautyqueen and twilight, Using mostly or exclusively mustard (the condiment kind :) for your binder works as well - that is, ditch the mayo! We don't do this all the time, but if you like mustard it works and also cuts out some of the fat. ~Sara

Make your egg salad the regular way and add any of these items, as many as you wish: Onions chopped celery minced carret shredded olives sliced pimento diced Also, you can add a little mustard to the mayo and eggs. You can whip the eggs until it is like a spread too.

Egg salad as in eggs and miracle whip? On bread? I am plain jane- I make it with just eggs cut up small- miracle whip (not mayo)- and add a touch of mustard- and olives at times- Sometimes even relish—livens it up a bit- I love egg salad sandwiches

I have also made it similar to the other posts. I also like to add curry or paprika and onions to give it some zip.

a simple egg and macaroni salad 8 eggs boiled and mashed 1 250g pack elbow or salad macaroni mayo 1 piece carrots pickle relish (optional) chopped ham or boiled chicken or tuna (optional) salt and pepper to taste mix together. when serving put on top of lettuce

Have you ever tried a bit of chopped green olives in it? Green olives are also good when added to cream cheese, like to have on bagels. You could also try adding pickles, sweet or dill depending on your taste, pickles are also good when mixed in tuna. I hope you give these a try, that's how I like them.

Well I don't know what you have been adding to the egg salad but we use curry, paprika, garlic or even parmesan cheese. But if you want something warm and delicious made with eggs, do a quiche ! and forget about the colloquialism "Real men don't eat quiche" ! They do ! and love it especially if they can disguise it with their favorite sauces. The quiche can have every vegetable you can think of in it and with the bread crumb crust or dough crust, it satisfies some very intense hunger pangs ! I love egg salad. thanks for your discussion as I have learned some recipe from this discussion and probably I will try them within two days. This sounds so lovely I feel hungry reading all this recipe. I have almost everything at home so i can try it right away but I am kind of tired now so will try tomorrow

I like my egg salad smooth and creamy rather than chunky, so I put the cooked egg whites in the Magic Bullet blender with a little juice left over from pickles and blend it smooth until it is sort of the texture of mayonnaise. Then I mix in the yolks by hand, along with lots of mustard and a little cayenne to give it some zip. After it is all mixed, then I like to add some chopped chives or cilantro, which are free if they happen to be growing in your garden. Epicurus, the ancient Greek philosopher more or less immortalized one of my favorite budget foods--eggs on toast. Simple, and inexpensive, but delicious!

Yes, my family recipe (I prefer the traditional american way) is make you're egg salad (eggs, mayo, mustard, s&P) then add copped onions, parsely and black olives AND potatoes! It's like egg and potatoe salad. You kind of pick each bite the way you want it. It's actually good (except I think the black olives are a bit harsh personally...) You can buy canned sliced black olives for just pennies. My mother also adds eggs finely chopped to her tuna salad and it's quite good. Best of luck to you - I'm there myself.

I dont like egg salad or deviled eggs or anything eggy really so I can't help with recipes. But I do buy eggs for baking and things. Do you have an Aldi store near you? They have really cheap prices so just buying your supplies there could cut down on the overall cost. I buy all my baking supplies at Aldi and the quality is good and the prices are dirt cheap.

Starting with your basic egg salad try adding one of these: Crisp, crumbled bacon or chunks of baked hame Dash of curry powder A spoonful of yellow, dijon,or grainy mustard Chopped pimento or roasted red peppers Chopped green or black olives Chopped celery Chopped red or green bell pepper Chopped red onion, chives, scallions, fresh parsley, dill, basil, or cilantro Chopped leftover steamed asparagus Sweet or dill pickles, or capers Bits of shredded smoked fish such as salmon, catfish, or trout Cubed cooked potatoes Dash of hot pepper sauce, Worcestershire sauce, or lemon juice Spoonful of salso, chopped jalapeno pepper

Hard boiled eggs with the sandwich spread mixture or even thousand island dressing is good too. You can eat six times on a reciepe like this for less than three dollars!!

I call this Oyster eggs. Boil your eggs, potatoes (season with salt, pepper and butter ) and make green chutney. Mix a bunch of coriander with some pods of garlic, cumin, chillies, salt, lime, sugar to taste and fresh coconut. Grind them. Mash your boiled potatoes and make a ball of it. Dig your finger in it and fill it with chutney. Place the boiled egg in it and agin cover with chutney and mashed potatoe. Make a big ostich egg of this and roll it in egg and then bread crumbs and fry. Yummy

A cheap egg salad is if you have chickweed or any other weed or chives growing that are edible. Take 2 eggs, chop them up. Chop up about the same amount of weed or chives as two eggs equals (like 1/2 a cup). Fold in the mayo, don't stir too much or it will loose volume. The fluffier it is, the more it looks like you have. If you deflate it too much, you look at it and it looks like 1/4 cup or a tablespoon. So don't overstir. Always put the mayo in last and only stir enough to wet the ingredients. Don't push down with a knife either. Spread around lightly with the back of a spoon if you are putting it on bread. Serve open face (without the top layer of bread) or add a bunch of lettuce or wild green like lamb's quarters to the sandwich if you add the top bread. I've made egg salad for 4 people with only two eggs. Stretching food with wild food is great. Take care
