What is your favorite Italian food? I am a great lover of Italian food, but not a lover of meat. Thus, I would have to say that my favorite Italian dish is Eggplant parmesan or manicotti. I love both. In the winter time, I entertain quite a bit and since everyone loves my lasaga, that is what I make for all the dinner parties. Each dinner party has different guests so no overkill on the lasagna except for me.

I would say it's lasagna. I haven't had it in a long time. I've only cooked it a few times because for me it's very labor intensive but I still love it.

Joep makes a killer Roasted Pumpkin and Spinach Pasta Roasted Pumpkin and Spinach Pasta 800g Butternut Pumpkin, cut into 1-2 cm squares Olive Oil Spray Salt and Pepper 350g Wholegrain Spaghetti (or Wholemeal) 1 bunch Asparagus, ends trimmed, cut into 3cm diagonal lengths 150g baby Spinach Leaves 1/3 cup Basil Pesto (bought if you can find vegan but home made works too or buy it if you're vegetarian), or Sundried Tomato Pesto or any Pesto you like really Preheat oven to 230C. Spray a non stick cookie tray or baking tray with olive oil spray. Place pumpkin on tray and spread evenly. Spray with more olive oil spray and sprinkle with salt and pepper. Roast for 30-40 minutes until just tender. While pumpkin is roasting bring a large saucepan of water to the boil and cook spaghetti according to packet directions. Drain, reserving 1/8 cup (or 2 Tbsp) water from the pan. Return pasta to the saucepan and cover to keep warm. Add the asparagus to the pumpkin after the initial 30-40 minutes and toss to mix. Roast for another 10-15 minutes until pumpkin is done. Add spinach to the spaghetti, reserved water, the pumpkin and asparagus and the pesto. Toss to combine thoroughly and until the spinach has wilted. Serve in bowls (or on plates) and top with parmesan or vegan parmesan if desired (but it really doesn't need it).

This sounds so good, I'm going to have to try it. I've made something similar with fresh spinach pesto, but the roasted pumpkin and asparagus will make it great. Thanks.

Eggplant parm is my absolute favorite. A close second is pizza cooked on a wood fired grill. I like a good Italian style salad to go with it, with lots of hot peppers and olives and shredded cheese.

I love eggplant parm. I get eggplant from Jerusalem and Cyprus. The seeds were taken from eggplant grown there and then grown here. It is so tender and so good.

Well, I'm going to have to try and find some of those seeds and plant some myself. I'm so hooked on eggplant now I've been eating it 3 or 4 times a week without getting tired of it. It's so good.

My absolute favorite is lasagna. I don't make it often, because it's a lot of work when you're only cooking for 1 person. I also love manicotti and pomodoro.

You can always make a pan of it and freeze what you don't eat.

True. Usually when I make it I get some of those disposable bread tins and make it in those. Then freeze all but 1. The others I just thaw and cook whenever I'm in the mood for lasagna.

I love Italian food its hard to pick a favorite. I love penne pasta with a good pesto sauce thrown in some grilled chicken or shrimp and I'm in heaven. I love to make lasagna,I just made it last weekend for daughter and grandkids.

Calzones :). But traditional ravioli, tortellini or lasagna are favorites of mine too. In reality, just about any italian dish is my favorite, but the four above came to mind first.
