I decided I wanted to make spaghetti for dinner tonight but I didn't have any sauce. I had some stewed tomatos so I just chopped them up added oregano, garlic, onion, sweet basil and red p-epper flacks all of which i had. I aslo added some corn starch to the juice to thicken into a sauce. This is great. I am living on a budget so if anyone has other recipes please let me know.

I made some spaghetti sauce but my husband did not like it. I bought a can of plum tomatoes plus a couple of cans of tomato paste. About my husband not loving it, he had to say it in the Superstore where this lady was listening and assumed I put too much of one product in it. I was going to buy another can of tomatoes, but he is the "why do you need that" type, so I guess I will have to buy fresh plum tomatoes when they are on sale, more than we will use, and freeze them and make the sauce, put it in a jar, and pretend that I bought it and it was at the back of the shelve all the time.

That sounds fantastic, I think homemade sauce is the only way to go, although I have been known to dump a jar of store bought sauce over noodles when I'm just too tired to cook. I like to heat up a little olive oil, saute garlic, add basil, oregano, red pepper flakes and parmesan cheese and then toss that with tortellini. It's very scrumptious. Depending on what I have in the fridge I sometimes add more ingredients like chopped mushrooms and onions.

putanesca is nice if you're tight on the budget :) original recipe includes:garlic, onions, olive oil, fresh tomatoes (or canned if you prefer), capers and anchovies (or tuna). i usually skip the fish part since im not all too fond of it _ but most of the time, i skip out on the capers since we dont have them lol then put a dash of basil or italian seasoning and viola! nice and healthy pasta sauce :)

i think the the ingredients are "flexible" can almost add anything you want in the sauce. but i think if you plan to add meat, you have to boil it first to lessen the "meaty smell" and make it softer so it would blend with the texture :)
ah and another recipe i love is minced chorizo (chorizo de bilbao, i dunno if you have that there) fried in some olive oil with atchuete (i think its called Annato in english, but you can skip it if you dont have it there, its this red seed stuff that gives of a unique flavor and rich redish orange color when fried or soaked in water) then you just top it off with parmesan cheese :)

another thing i forgot to add lol :) basil pesto! :) homemade is cheaper i think than the ones bought in gourmet bottles :P its easy to make :) use corn oil instead of olive oil if possible so when you store the sauce in the fridge the oil wont "freeze" :)
