Well I never thought I would love my cooking experiment this morning. I opened the refrigerator and found out that I do not have any thing to cook except for egg, eggplant and cheese. So I decided to mix these 3 stuffs together...

gypsygoth interesting dish! :D may i suggest you roast the eggplants on open fire first then take the charred skin out by washing it out on running water :) it gives the eggplant an extra "omph" on the flavor side ;) then maybe put it on a baking dish and place beaten...
