It wasn't potatoes. It was a single celled protein with vitamins and minerals. Might have been some sort of algae (yes I know thats a stretch, but that and maybe some sort of advanced bacterium could fill that role).
If you've seen all 3 and know the relationship, then its possible the proteins come from Zero-One and its secretly given to Zion every 100 year reset. Or they could have been grown somewhere in Zion possibly the caves where it is still warm enough for single celled organisms to grow.

but in matrix part one, they are mobile on their ship right, so how do they store food, if they are single celled protiens, and they sure must be, cause i remember the words, so how do they store it?

Actually that is the real world. The program within a program argument makes some sense but I've come to see it as a real world vs Matrix. The machines destroy a real Zion and every 100 years they pretty much physically reset it along with the Matrix. Remember the Oracle said that 99% of humans would accept the Matrix if given a choice. The real world is used for the 1%. It has to be the real world too. Smith gave us hints (and the Architect confirmed it) that the first Matrix failed because it was too perfect (and no one had a choice of being there or not). The Architect then revealed a second Matrix where it was too violent and unbelievable, hence its failure. The Oracle researched human behavior and determined that the choice was the say all end all of human nature. As long as there was a choice people didn't care. For those that didn't choose the Matrix, Zion was formed. And it had to be a real one due to the inquisitive and doubting nature of the Zion rebels. If it was fake, they'd know it and that Real World Matrix would unravel too. Plus the machine's programming of a reality has it flaws, therefore they had the failed Matrixes and people doubting the Matrix itself ("like a splinter in the mind")

They stored the food in little visible plastic tanks and would dispense the food when the rebels needed it. They most likely have bigger tanks to store larger supplies of food for long trips or a numerous amount of the smaller tanks.

They don't eat really, they are being fed with the machine's energy. They never escape from the matrix, and you can noticed it in the second movie, when Neo stop the sentinels, they should be in the "reality" but is not. Matrix is a big program, so when they "join" to the matrix, they are joining to a subprogram. There is not way to get out to Matrix, the Architect told it to Neo, the matrix had destroy Zion 5 times and will continue doing it... So Zion is not real, is another subprogram of the big program called The MAtrix. So i don't think the food is real there.

I think it was potatoes, for some reason. It was mentioned during the movie at some point, but thats all I remember.
