Do you always use the kind of oil that the recipe calls for or just the kind that you like?

I always use extra virging olive oil in my cooking and baking only alternative would be margarine. I use virgin oil as it can take a higher temp, minimizing the risk of a pan fire and it does not 'spit' and mess as much as sunflower or corn oil etc.

I largely use olive oil for any cooking that I might do. I'm italian, and it's the healthier option in general since olive oil has less of an effect on your cholesterol. In fact I even use Olivio instead of butter. When it comes to baking I usually use vegatable oil. It's usually what I have on hand too. Although I know some recipies let you substitute apple sauce for oil and that is also a much more healthy alternative.

For baking and the likes I use vegetable oil, but for frying foods I use Canola Oil. I can't afford Extra Virgin Olive Oil - or as Rachael Ray says "E-V-O-O". I try not to fry too many foods though.

I use pure vegetable oil when oil is needed. But I hardly ever need to use in when I cook. I guess I should make a cake or something. : )
