Can we preserve over-ripe bananas in any way so that they can be used later?

Just peel it off and keep it in the freezer. You can use it for banana fritter, banana pancake or may be your banana bread later when you want to make them. But my mom likes to make a fritters directly when there is a banana which is over ripe in our kitchen.

I often just peel them and freeze whole. I use them for fruit smoothies and banana bread and muffins.

The only way I can imagine it working is if you puree them and then store them in a small, sealable freezer bag. They will last a couple days in the fridge and maybe a couple weeks in the freezer if you get most of the air out of the bag before sealing it. You can then use them to make banana bread or banana cookies but not much else.
