People who live alone, what do you eat?

My husband is away, so I only have to cook for myself (the toddler eats scraps of anything). But I never know what to eat, because I don't want to make a huge complicated meal for myself. Then there is frozen, single-serve things, but most of them have some sort of trans-fat in them, and I am trying to avoid that. Suggestions?

since my son who is two and I both have favorite food of homemade mac and cheese I usually make that or sandwhiches. If you want meat then just add ground up hamburger into the mac and cheese. Yummy!

I quite enjoy cooking, I live with my 2 kids and my man when he stays over. I often find i tend to make far too much when going something with pasta or perhaps something like sheperd pie. What doesn,t get eaten I would let it cool and freeze the rest. Perhaps you could try this when you fancy making a certain meal for yourself then bothing would go to waste. xx

I do that sometimes, but I really just don't think things taste as good leftover.

Have you tried making meals and spliting them up into portions for you later? Invite friends for a nice dinner and save some for yourself for a later meal. Try some of the diet meals even though you may not be on a diet they are healthy for you. Hope you find something that works soon or your husband comes home soon.

Some supermarkets and delis have premade dinners (some made by the deli owners) that are ready to heat and not too expensive. I eat pasta veggies a lot. Sometimes I heat up a can of chili but put in more of my own veggies--onions, peppers, mushrooms, etc.--to make it more nutritious.
Frozen foods have gotten much better, health food stores and even regular supermarkets now have natural food/low fat frozen dinners and entrees.

Whatever can B cooked for a big family, can B cooked for a 1 and a quarter family. All U have to do is use small portions of ingredients to make a large enough meal that U actaully feel like eating in a day.

Yeah, I suppose that would make the most sense. Unfortunately, I'm just not very good at that! LOL. allrecipes.com will scale it down for you though, maybe I should do that with the recipes I find on there.

yes. i have live alone for last 3 years. i tried to prepared food by myself. actually i like to eat at my home.
