My Carrots in Carrot Cake Turned GREEN!

Anybody out there ever bake a carrot cake and have the carrots be green when you cut the cake?? This is the second time that has happened! I wonder if it's the preshredded carrots that do this. Tell me if you know why this would happen and if it's happened to you! It's sort of EMBARRASSING!! I baked the cake for a staff member so there were over 20 folks eating my carrot cake that looked like Jalapino-Bell Pepper cake!! But, mmmmmmmmm it tasted so good.

Did they really?! Wow thats the first I've ever heard of that sort of thing happening...but if it tasted fine I really wouldnt worry about it...

Renae, if you baked me a cake for my birthday I would be so grateful that I wouldn't care if the carrots were green! Ha! I did a quick search and came up with these explanations. Who knows which answer is correct!

Thanks for the links! I went to both of them. The first one, I don't agree with because I peel my carrots if I shred my own and this time I bought preshredded carrots. So, that one is out.
Also, the second one makes more sense, Perhaps I should try the little bit of lemon in it. I thought it's possibly because the preshredded carrots have been treated, but if other's have the problem NOT in carrot cake, I think the acid / alkaline issue sounds more like it.
