It simply means that the team who was not supposed to win won the game. People have favorite teams who win all the time either by luck or skill. For example if a team has won ten straight games and play a team that has won 6 and lost four, then the team with the most wins is favored over the other onw. So when the team that is "not as goo" beats the higher ranked team it is an upset.

An upset in football, or any sport for that matter, means that the team that was expected to win actually lost the game. In this case, the New England Patriots were 18-0 (18 wins 0 losses), so it was an upset to lose to the New York Giants who started the season 0-2.

For me it means, that the team that was expected and should've won, didn't. Everybody expected the PATRIOTS to not only win, but to dominate the game. The GIANTS went into the game with no fear, they didn't respect Brady at all. Eli stood up and became "da man".
