I finally made my own pasta!

OK, I've been trying to do this since my boyfriend got me the pasta making kit for Christmas that fits onto my Kitchan Aid Artisan stand mixer. Yesterday, no afternoon appointments, so I finally had the time to devote to this project. I was so excited in my kitchen. I had enough flour, eggs, etc. I decided on spinich pasta. The recipe called for 10oz of frozen spinich, 1 tablespoon of water, 4 large eggs and 4 cups of sifted all-purpose flour. I dove right in and did everything according to the recipe. What? Why is this so dry. Not only dry, it was crumbly! WTH! I was real sad. So, I put that mixture aside in a bowl and attempted another batch, this time the basic egg pasta........What? another dry batch? Is it my flour, WTH! So, I came down here to my trusty computer and looked for a while to find a recipe for home made pasta. There it is, a recipe for basic pasta it called for 1 cup of flour, one egg and t tablespoon of water.........so I compared....hummm, 1 tablespoon of water to 1 cup of flour. Could there be a typo in every recipe in my Kitchenaid pasta sheet roller and cutter set recipe booklet? Evidently so............So, I ran upstairs, transferred the basic pasta crumbly dough back into the mixer, added olive oil, garlic powder and italian seasoning and another 2 tablespoons of water......well, what do you know? It was sort of looking fine. I took it out, kneaded it for the called for 1 to 2 minutes and set aside for 20 minutes as it called for. Then I went back to my spinich pasta and did the same thing, added olive oil and more water.........well, again I am amazed at how smart I am now! It was looking mighty good, not dry, crumbly and falling apart, so I took it out, kneaded it for the 1-2 minutes and then cut into 8 pieces, it sure did make a lot! Then I had to figure out the pasta sheet roller and cutter set......that took a bit of time as well, but I am now an experienced pasta maker and for dinner last night, we had the spinish pasta and I even made home made alfredo sauce! Yumm-O......

Well, aren't you the clever one! I'm glad you didn't give up and throw it out. Sounds like you're going to be eating pasta for awhile. Do you dry it out and keep it, just store it in the refrigerator, or what? Your spinach pasta with alfredo sauce sounds absolutely delicious. Did you take a picture?

I was going to take a picture and send to you, but my camera needed charging..........so, it's on the charger now. When I find out what to do with the left over pasta dough, I'll let you know. I don't know why I could not freeze it as is. Funny, I almost did get real upset and throw it out, but knew it had to be fixable somehow, because the flour was new the milkman had just brought the eggs......everything was in proper order.

Nice job! Sounds like a delicious meal. I've been thinking of getting one of those attachments for my mixer as well. I've never made homemade pasta except for helping my mom a bit a few times. She makes delicious pasta. It's always seemed like a daunting task to me but now you give me hope! :)

If I can do it, you can do it! Go get that attachment and make some. It was a lot of fun and healthy and didn't really take that long, after I figured out the recipe!

Fresh home made pasta. Sounds de-lish. I recently answered a post about a lady who had used her home bread machine to kneed the pasta for her noodles. Bet it is healthier too. Enjoy it, you earned it.

Oh, we did enjoy it. It takes only 6 minutes to cook once the water boils and the alfredo sauce was real easy too! I was really proud of myself. I think I still am :) We had garlic bread too. I made some white bread in the bread maker a few days ago and cut into slices, put on my grill pan with some butter, garlic and just a bit of sea salt.........we left the table very satisified!
