Creative veggie ideas

I'm looking for veggie ideas as side dishes for dinner... I know there are many things you can do with veggies....low-fat ideas. I am just drawing a blank .. We are so boring and are basically only steaming everything. Since I'm doing Weight Watchers I want to capitalize more on veggies. Scott is not and is somewhat picky, so I'm looking for ideas that I will copy/paste and save ...pulling from when I do my menus. Veggies we will not do are: green beans, carrots, lima beans, peas. Any and all suggestions are very welcome. Thanks, friends!

I don't really like veggies much but I find it really tasty to slice zucchini, thin potato slices and bell peppers, spread them on a cookie sheet. Spray them with butter or olive oil flavored cooking spray and sprinkle on some garlic salt and onion salt. A little Lea and Perrins is good, too. Bake till potatoes are done and you have a delicious dish. Butternut squash is delicious, too. Microwave it for a few minutes until you can halve it then bake it. It's delicious by itself, with or without salt or you can brush sugar free maple syrup on it (it comes out less than a tablespoon). It's also terrific if you combine cooked butternut squash with a diced pear, a little onion, nutmeg, cinnamon and rosemary and some chicken bullion. Make it into soup in a slow cooker or on the stove then put it in the blender so it's thick and creamy. Serve it hot, maybe sprinkle a few chopped pecans on top for garnish. It's wonderful, and very low calorie!

My grandma makes cucumber salad sometimes. I don't think it's really common but I do think it's more of a summer dish. It's just sliced cucumbers, onions and sour cream. She might add some milk because it's not as thick as you think it would be. Not watery but thinner than just sour cream. It is really good if you like cucumbers and you can probably find it online.

Aww too bad. I'm not sure if tofu can be included in your diet or if you have time to prepare this dish of mine. My mother is diabetic and has cancer so I have made a lot of twists on some veggie dishes. One is that I've sauteed baby corn with fresh tomatoes and tossed them in pasta, lightly salted. My recipe with tofu is I mash the tofu, toss in grated carrots and onions plus an egg and shape them into croquettes. you can either grill or fry them. It's an excellent side dish and can be made into sandwiches too. Good luck in finding more recipes!

Here is a recipe for a broccoli/califlower salad. I know that you don't have those on your list, but maybe you could substitute the broccoli/califlower for the veggies you like. brocc califlower 1 chopped onion 1 cup reduced fat mayo 1/4 cup sugar substitute bacon bits 4 tbsp vinegar mix together and chill 1 pt per cup.

Toufu (Bean curd) with Century Egg Ingredients: 6 pieces of toufu 2 century eggs 1 tablespoon of sesame oil 1 teaspoon of fine salt 2 tablespoon of light soya sauce 1 clove of garlic chopped 2 strands of spring onions finely cut. Directions: Place the toufu and peeled century eggs into a mixing bowl. Use a potato masher or spoon and mash up the contents. (Once you are satisfied with the texture you may stop) Pour in the sesame oil, salt, minced garlic and light sauce. Mix till they are well. Serve it on a plate with the spring onion. Bon Appetit

How about grilled peppers with couscous or rice and mushrooms & onions? You can add some low fat soft cheese to the filling as well, that's quite nice. or a large mushroom, grilled and stuffed with onions, low fat soft cheese and any other veg you think might fit.

How about stirfry packs - quick, easy and low-fat, also a sauce can make them more interesting. Also, you could try using veg to bulk up meals, i.e. add a tin of chickpeas or lentils to pasta sauce, mushrooms and peppers to bolognese or chilli etc.
