Tomato soup

I have only ever eaten the canned Campbell's Tomato soup, but I was thinking that I would like to make it from scratch sometime. Have you ever made tomato soup from scratch? Did it turn out ok? Care to share a recipe?

From scratch? That would be interesting. You would be using far better quality tomatoes -- and the choice of tomato might be important. Vine ripened would probably taste good, but there are also those sweet-tasting cherry tomatoes I buy for my daughter. I bet they would make an excellent soup. But what would you want in the soup. Pieces of tomato or pureed? I think, if I were going to try making a tomato soup, I'd probably veer pretty far from Campbell's. A bit of chili or hot peppers might be nice. Some basil, perhaps, to make it seem sweet without adding sugar. Maybe even Oregano. Now, with me, I always try to sneak additional nutrition in when I'm cooking. Carrot juice, some sauted onions, some potato to thicken it. If you are cooking for yourself, you can feel free to experiment. When the soup companies make their tomato soup, I am sure they are far less picky than you would be about the ingredients. I imagine that fresh tomatoes grown in a garden would probably produce the best-tasting tomato soup you've ever had. You should try it. :) INGREDIENTS * 1 tablespoon vegetable oil * 1 cup chopped onion * 2 cloves garlic, minced * 1/2 cup chopped carrot * 1/4 cup chopped celery * 2 (28 ounce) cans crushed tomatoes * 3 1/2 cups vegetable broth * 1 tablespoon vegetarian Worcestershire sauce * 1 teaspoon salt * 1/2 teaspoon dried thyme * 1/2 teaspoon ground black pepper * 4 drops hot pepper sauce DIRECTIONS 1. Heat oil in a large Dutch oven over medium-high heat. Saute onion and garlic until onion is tender. 2. Add carrot and celery; cook 7 to 9 minutes until tender, stirring frequently. Stir in tomatoes, broth, Worcestershire sauce, salt, thyme, pepper and hot pepper sauce. Reduce heat to low. I don't care for most canned tomato soup...especially Campbell's...it's too sweet and has way too much sodium. I've had tomato basil soup made from scratch that almost tastes like marinara sauce but it was really yummy.

I don't have a recipe, and can't cut and paste yet unfortunately to get you one. I made this once and it turned out okay. I liked it very much, but my family is so used to the campbell's that the scratch wasn't sweet enough for them. I could make it just for me - has to be more healthy than the canned with all that corn syryp or whatever they put in. whit
