This is for you to try out, I hope you will like it. Pengat pisang is a dessert made from banana and some coconut milk.
PENGAT PISANG
Ingredients :
Ripe bananas ~ sliced thickly
White sugar
Coconut milk
Sago ~ soaked
a pinch of salt
Method :
1. Pour coconut milk, salt and sugar in a pot.
2. Cook on slow fire, continuously stirring.
3. When boiled, put in the bananas and sago.
4. Turn off the heat once the sago turns translucent and the bananas are soft.
Note :
a. You can substitute white sugar with palm sugar/jaggery
b. To give it a nice smell , you can add screwpine leaves (pandan).
c. Serve it either hot or cold.
What I did :
I don't have sago at that time, so I didn't put any. And just to give some color to the Pengat Pisang, I added a bit of cha-cha. Actually, I don't really know how to go about cooking this cha-cha. Got a packet from Alia and it was in the freezer ever since. So I just boil the cha-cha and once it's soften a bit, I add them into the pengat.

Another recipes for you to try out
Lepat Pisang literally means "Wrapped Banana" in Malay language, the national language of Malaysia. The recipe uses coconut, banana and also, banana leaves. If banana leaves are unavailable, you can use foil to steam it instead.
Lepat Pisang Recipe
Ingredients
15 small bananas
500g flour
sugar to taste (as bananas naturally, you do not require too much added sugar)
1 cup coconut milk (if available, use 1 cup fresh milk)
salt to taste
100 g dessicated coconut
Banana leaves cut into rectangular squares size of approximately 8 by 6 inches.
Preparation
1. Mash or blend the bananas until smooth.
2. In a large bowl, mix all the ingredients together until combined.
3. Place about 5 fairly large spoonful of the mixture in the middle of each banana leaf square. Arrange in rectangular longish shape (about 5 inches). Wrap/Fold the leaves over the lepat pisang completely covered.
4. Continue with the rest of the mixture until its finished.
5. Arrange all the wrapped bananas in a steamer and steam for 30 minutes.
6. If banana leaves are unavailable, pour the mixture into a cake pan and steam for 30 minutes. When cooked, the lepat pisang should ideally be slightly mushy. Cut in rectangular longish squares. Serve.
Banana leaves gives the dish a nice earthy flavor. The leaves can be bought at most Asian grocers whether chinese or indian. If banana leaves are unavailable, foil can be used instead.
This dessert should be served either warm or at room temperature.
If the dish does not finish in one sitting, you can refrigerate the remainder and either reheat in a microwave or steam for about 10 minutes.
Banana Fritters Recipe.
Ingredients
130g plain flour
1 tablespoon sugar
1/4 teaspoon salt
1/2 cup water
about 10 small ripe Bananas, peeled and cut diagonally
1 egg yolk, optional-I prefer adding this to ensure the batter sticks better to the Bananas.
oil for frying.
Preparation
1. Combine flour, sugar, salt, water, and egg yolk (if using) in a small bowl and stir until a smooth batter forms. To reduce lumpiness, you can use a blender.
2. Heat oil in a wok over medium fire. Dip the sliced Banana one by one into the batter and drop into the hot oil.
3. Fry in batches until golden brown and crispy.
4. Drain on absorbent paper and serve with hot tea or coffee. Yum!
Variants
You can also sprinkle the freshly fried Bananas with cinnamon for a spicy taste.
Cucur Pisang
Ingredients
1 cup flour
5 mashed Bananas
1/2 cup milk
a pinch of salt
1 teaspoon vanilla essence.
sunflower or corn oil for frying.
Cucur Pisang Preparation.
1. Place the sifted flour into a large bowl.
2. Add the mashed Bananas, milk, salt and vanilla essence into the bowl.
3. Mix the ingredients until well combined.
4. In a wok or deep pan, heat the oil. When it's hot, use a spoon to scoop the prepared mixture and drop into the hot oil.
5. Do this in batches so that it's easier to manage.
6. Fry the balls until brown and cooked. Scoop them up and place onto a absorbent paper towel to absorb the excess oil.
7. The snack should not necessarily be a perfect round ball.
Variations.
Malaysians make different versions of this recipe. Any leftover or extra vegetables can be cut up and mixed with the flour and fried.
The savory versions may have chopped shrimps, coriander leaves or potatoes thrown into it and are served with homemade chili sauce and it's a common teatime snack.

I love bananas. Banana pudding and smoothies...yummm
I like to mash and add to (oatmeal) cookies and other baked goods to replace some of the oil/fat and sugar. It adds a wonderful flavor and texture and nutrients. I also like to add it to my cereal, pancake batter, and oatmeal.
I like to make banana bread:
2 1/4 cups flour
2 tsp baking powder
1 tsp baking soda
1 1/2 cups mashed bananas
1/4 c honey
1/4 c cooking oil
2 tsp vanilla extract
1/3 cup chopped nuts
1/3 cup raisins (optional)
1 Preheat oven to 350.
2 Mix dry ingredients together.
3 In a medium bowl, mash banana with a fork.
4 Mix the rest of the wet ingredients with the banana.
5 Pour liquid ingredients into the dry ingredients.
6 Add nuts or raisins.
7 Pour mixture into loaf pan and bake about 50 minutes.
