"Brazilian Beef" (Pot Roast with Coffee) INGREDIENTS: * 3 pound beef pot roast * 1 tablespoon shortening * 1 can (approx. 15oz) diced tomatoes with liquid * 1 cup black coffee* salt and pepper * 1/2 cup chopped onion * 1 1/2 cups diced carrots * 2 1/2 cups diced potatoes * 1 package (10 ounces) frozen green peas * flour mixed with cold water to thicken liquids, optional PREPARATION: Brown meat on all sides in shortening in heavy kettle or Dutch oven. Add tomatoes, coffee, salt and pepper. Bring to a boil. Cover and simmer for 1 1/2 hours. Add onion and carrot; simmer for 15 minutes. Add potatoes and cook until vegetables are tender; add peas and cook for 3 or 4 minutes. To thicken liquids: Make a paste with 1 or 2 tablespoons of flour and a little cold water; stir until smooth. Stir into hot liquid a little at a time until desired consistency is reached. Pot roast serves 6.

I will try this. Doesn't seem like it would be too hard. Looks wonderful, especially on a cold night. Thank you for going above and beyond.

Steak - French style - Canlis Steak. Just a mouthwatering picture!
I find my appetite is less than it used to be so an 8oz fillet steak or a 10oz rump steak is almost too much! I think those are English cuts and I don't know how they relate to the American cuts. We do have T-bone here, though. I usually ask for my fillet to be 'rare to medium' and my rump to be 'medium to well done'. I have a friend who likes his 'blue', which is basically "shown the grill and told not to go there"! I once had steak tartare (in Holland), which is raw ground fillet mixed with raw egg. It was incredibly rich but delicious. Perhaps a 'once in a lifetime' thing, though! As a pie or casserole, I like a good Beef and Ale pie and Brazilian Beef (casserole), which has a secret ingredient - 1/4 pint of good, strong coffee!

You've made me hungry! I really have to try this steak tartar thing. Everyone seems to love it. Not many foods I haven't tried. Sounds like you know your stuff. Thanks for everything.

My absolute favorite is a porterhouse, followed closely by t-bone. I like them done "cold center" or "black and blue" both of which are extra extra rare. A good steak is also quite good raw. (tartar which is usually ground meat usually has too much fat to be good raw.)

I actually don't like steak much! But I think well-done... I often find if I endeavour to eat steak that I feel like I swallowed a brick for a few hours after. That's a pretty strong deterrant.
