What to cook...

I am having company (husband's coworker and her family) over for dinner next weekend. I am making enchiladas, but I need some ideas for the rest of the meal... just enchiladas could be a little.. boring. anyone have any ideas?

You could also add a nice salad that includes chunks of chicken, black beans, and salsa for the dressing. I like to buy the southwestern style chicken chunks to add to my salad. The salsa is doesn't have all the fat that other dressings have and is delicious. Put a dollop of sour cream of fresh guacomole on top. Yum. Now I've gone and made myself hungry.

Well, my favorite choice would be Sopapillas. I've never made them but I do have a recipe I found. I grew up in Texas and it was one of the items I had to have from the menu when we went out. Here is the recipe: 2 cups all-purpose flour 1 tsp. baking powder 1 tsp. salt 2 tbsp. solid vegetable shortening 3/4 cup warm water oil for deep frying Sift the dry ingrediants into the bowl. Using your fingers, rub in the shortening until the mixture is like fine bread crumbs. Gradually, add the water until the dough begins to form. Wrap the dough in plastic wrap and allow to rest for 1 hour. Work with half of the dough at a time and roll into a square keeping it as thin and even as possible. Cut the dough into 3 inch squares. Repeat with the other half of the dough. Heat oil for deep frying to 375. Add a few squares at a time using tongs to push them into the oil. Cook till golden brown on both sides, turning once. Remove them from the oil and allow to drain on paper towels. To serve, place on a plate and drizzle with honey and cinnamon. Another choice, fried ice cream. You don't even have to make it. I believe it's Breyer's that makes it. It is wonderful.

20 bucks for spinach for 4? are they insane?? imma try and plant some this year, if the groundhog doesnt eat it all, maybe i'll send ya some =o) ;squishes back;

I think we may go for the spanish rice.. Spinach here must be made of gold or something... enough spinach for everyone would cost near 20 dollars O.o We checked that out over Thanksgiving lol. ;squish; good suggestion tho :)

You could do a few side dishes. Rice, beans, corn pudding? Those are the sides that they serve at this Mexican place that I do to sometimes. They also serve chips and salsa while you are waiting for your food to arrive.

My boyfriend was going to make chili, but here in missouri, it's hard to find habaneros and that is his special ingredient, so no go lol. The chips and salsa, though, is a great idea. Maybe some guacamole... Thanks!!

I'm a big fan of enchiladas, garlic breadsticks, and a dressed up salad. In the salad i like to put pepperonis, ham, turkey, shredded cheese, some boiled eggs. Mmmmmm. :]
