Cucumbers are great for your health. More than just cucumbers, there are more veggies and fruits in the produce that best keep you going. I understand that those who are elderly and cannot eat alone, need special help in eating. So lots of veggies and fruits are great for your meal plan. You can have some meat and poultry. You should have pasta which is source of fiber. So plan on including veggies and fruit along with your favorite meat.

I like my cucumbers fresh and raw. I like the crunchiness when I bite it. I like it in my salads and sandwiches. Sometimes I dip my cucumbers in thousand island or vinegar with sugar. I can also eat it plain. I haven't heard yet of cucumber being cooked except for pickles.

I do not believe I have ever had cucumbers cooked - the idea is very foreign to me. I can not even imagine how it would be cooked. I like my cucumbers raw and unless they are very young I like to have the seeds removed by slicing the cuke lengthwise and scraping them out with a spoon first.
Zucchini I like both raw and cooked equally well.

Hello dear sophialin. I love to eat in salad with some sugar and vinegar or just eat it raw. I think that it is more tasty to eat this way. If it is cooked, I love to have some hot pepper in it.

I eat cucumber both raw and cooked. When I eat it raw, I make round slices, and dip it in the mixture of pepper and salt powder. I also make cucumber raitha. I grate it and mix it with curd/buttermilk and salt and season it with mustard and chillie.
I cook it in two methods.
1. I dice the cucumber and cook it with minimum water. I add cooked moong dal to it along with desired amount of rock salt. Then add ground coconut, chilly and cumin seeds. The paste should be fine. Mix well and bring it to boil
2. Cook the diced cucumber add rock salt to it. Then add the ground paste of coconut, curryleaves, coriander leaves and cumin seeds. (The paste should be fine. Then bring it to boil. Once it is done. Remove from flame and add unsour curd. Season it with mustard in ghee.

May be raw cucmber is my choice.
I make cucumber and tomato salad alot!Just dice the 2 vegetables toss them together and drizzle some lemon and olive oil - add salt and pepper to taste. Sometimes I add some black olives too.
My husbband loves cucumber sandwiches. Slice them pretty thin, arrange them on bread with mayo (if desired).
Here are few cucumber recipes.
Freezer Bread & Butter Pickles
4 cups thinly-sliced cucumbers, 3/16 inch thick
1 cup thinly-sliced onions
1 sweet red pepper, thinly sliced
2 teaspoons pickling salt
1 1/2 cups cider vinegar
2/3 cup sugar
1 teaspoon mustard seeds
1/2 teaspoon celery seeds
1/2 teaspoon ground turmeric
1. Place the cucumbers, onion and sweet pepper in a large nonreactive (glass or plastic) container.
2. Sprinkle with salt and mix well.
3. Let stand for 3 hours, stirring occasionally, drain.
4. Rinse twice and drain thoroughly.
5. Heat the vinegar in a microwave oven for 30 seconds or warm it slightly on the stove top.
6. Combine the vinegar, sugar, mustard seeds, celery seeds and turmeric in a small bowl, stirring until the sugar is dissolved.
7. Pour over the vegetables and mix well.
8. Pack the vegetables into small freezer containers.
9. Divide the liquid and pour it over the pickles.
10. Seal tightly and freeze.
11. Store the pickles in the freezer for up to 6 months.
12. Once thawed, use them within several days before they lose their crunch.
Cucumbers and Onions
2 medium cucumbers
2 medium onions
salt
2-3 tablespoons mayonnaise or salad dressing
1 tablespoon sugar
1 tablespoon vinegar
4-6 servings
1. Peel cucumbers and slice thin.
2. Layer in shallow dish, sprinkling each layer with salt.
3. Let stand overnight.
4. In the morning, drain cucumbers and rinse.
5. Let dry on paper towels.
6. Slice onions thin.
7. Mix gently with cucumber slices.
8. Beat together the mayonnaise or salad dressing, sugar and vinegar until creamy.
9. Stir into mixed cucumbers and onions.
10. (The dressing should be plentiful so the salad is creamy. Increase amounts of dressing ingredients, proportionally, if needed).
Cukes and Onions (Cucumbers and Onions)
1 cup mayonnaise
1/4 cup sugar
1/4 cup vinegar
1/4 teaspoon salt
4 cups sliced cucumbers
1 small onion (sliced thinly)
6-8 servings
1. In a bowl, combine mayonnaise, sugar, vinegar and salt.
2. Add cucumbers and onions; stir to coat.
3. Cover and refrigerate for 2 hours.

Cooked cucumber isn't my preferred way.Cucumber eaten raw is the best. Its heavy water content is its main USP and eating it cooked destroys it.I prefer eating it raw and sliced with pepper and spicy masalas sprinkled on the pieces.

I must admit I've never had cucumbers cooked at all but I'd like to have your recipe. I mainly have them in salads and I've been meaning to try to make pickles with them. My late aunt used to make the most delicious sweet pickles which were very easy, you just put them in the refrigerator.

I don't think I have ever eating cooked cucumbers. I like to eat cucumbers by just peeling them and eating them just like that. I ate them often as a snack while I was pregnant. I can't wait to get more I haven't had one in a while.

Ok this may sound weird, but my dad started it when I was young and it just carried on with me. I like to take the cucumber, slice it, and peel it. soak it in vinager, water. After its done soaking i'll salt it a little and eat it. I like the twang that it gives.

I definitely prefer it raw, it has a great crunchy feel to it and it gives off a lovely amount of juice. I like to dip it into dips too, It is good in sandwiches with pate and all sorts of other fillings. Infact we only had some yesterday!
