It's cold and wintery here in Minnesota and we even had a little snow this morning!! It's almost May and we can't get rid of the winter. But when the weather is miserable outside I love making it warm inside by baking. Tonight for supper I made corn muffins to eat with the hotdish I made! They were yummy. I put butter and maple syrup on mine. Do you make corn muffins? What do you eat on yours?

April snow? Yikes. Is that typical? I like my corn muffins plain. The way my mom made them , she added sugar and margarine to the mix so it was sweet and buttery enough to eat plain. Here's hoping you get some spring weather.

Cooking, Food, Cornbread - Cooking
Corn bread
Corn bread/muffins always bring back good childhood memories of my grandpa. I like to make them for breakfast with a fresh pot of coffee once in a while...and when they come out of the oven, I slice them through the middle and lay a soft pat of butter in them. Mom has diabetes so I don't make them often, but I've noticed I make them more often when it's cold outside. For my hot chili I like to make the dough and make corn twists so they can be dunked. It was cool and windy today here, but no snow...yet.

Yes, isn't this winter weather the pits. I am ready for spring but that white stuff keeps showing up on my lawn. It went away by this afternoon but it's still a little nippy outside. Corn muffins sound so good...I love them I haven't made them for a long time. I may do that in the next few days. I made homeade pizza tonight for supper....the oven warmed up my kitchen a little. I usually put butter and honey on my muffins.

I've actually never made them, no. But I do eat the same as you. We were VERY cold here today and were also supposed to get some snow. Nothing yet, so maybe we will escape it.

I don't usually make muffins but I do make corn bread. Some years ago we had some corn bread in a restraunt in Charleston SC and they were so good that I started making mine like they did. They added some shredded cheddar cheese With some garlic with parsley. They go so well with chili or bean soup.

I never put syrup on them but I might try it. I usually use the Jiffy box mix for cornbread and no one knows the difference. I usually serve them with a stew or something like a creamy soup; clam chowder is a house favorite.

I use the corn muffin mix and make mine on my George Foreman grilling machine. They are very crunchy and tasty! They go great with soup or for breakfast with syrup or honey.
