Recipes Using Vodka Sauce

I recently discovered Vodka sauce. I had heard of it before, but had never tried it. I absolutely love it now. I use it in a chicken dish that I love to make. It uses a bunch of peppers and onions and the Vodka sauce is the base. THen I put it all over rice. I am just curious now, what other kinds of great recipes this sauce can be used for. Also, does anyone make their own? I have just been buying the store-made kind.

I have no idea! I was hoping someone on here would know...
All I know is that I buy it in the spaghetti sauce section of the store. It's almost an orange color. It's great :)

Rachel Ray has a vodka sauce recipie for pasta which is called "You won't be single for long pasta." I've never made it,but I always wanted to. I'm sure I'll get around to it one of these days. Your chicken recipie sounds good how do you make it?

The chicken recipe (without any measurements)takes...
chicken cut into bitesized pieces
red and green bell peppers, diced
onion, diced
minced garlic
canned diced tomatoes w/ chilis
jalapenos, minced
vodka sauce
rice
some flour and oil
I heat up some oil and mix in the flour. I cook it, stirring it constantly, until it turns a golden brown. I then add the chicken, and start cooking it until it starts to brown. Then I add all my chopped peppers and such and cook them for a while. This is when I add any seasonings I have on hand...like cayenne pepper, Mrs. Dash, or just salt and pepper even. THen I add the sauce and I let it simmer for about 15 minutes. Meanwhile, I cook some white rice. I serve the chicken over the rice.
I am almost obsessed with this meal!! :)
