Probably over 5yrs now, but never from packet mix.
I tend to make stuff like scones, flapjack etc instead of just a cake.
Packet mix will never be as good or satisfying as the real thing.

its been about a month since i've made a cake from scratch. in high school my grandmother lived with us for a bit and i had made her one from scratch for her birthday. my great uncle was there and thought that it was really good so i've made him one when we go down to visit him around his birthday. i get my recipe out of the betty crocker cookbook.

I am just after taking a lemon meringue out of the oven!!! And a pineapple upsidedown cake. All made from scratch. I never use pcket mixes as I think it works out too expensive.. :-)

It's been a year or two and I did bake it from scratch. I don't mind the mixes, but I almost always prefer the taste when it's baked from scratch. I also like to try kinds that I don't see available in a mix.

I baked one yesterday from scratch - a chocolate and coconut cake, and it was delicious.
I always used to be very bad at baking cakes so didn't bother, but I've recently somehow, almost as if by magic, developed the skill.
This is an unconventional way of doing it, but this is the recipe which just came out of my head, not a book.......
Grease a cake baking tin with oil or butter. Place 6oz self-raising white flour, 3oz sunflower margarine, 3oz brown sugar, 3 tablespoons drinking chocolate and 3 tablespoons shredded coconut. Mix together with a fork or fingertips as if making pastry, until it resembles fine breadcrumbs. Make a well in the middle and add 2 beaten eggs and 2 tablespoons of milk. Mix thoroughly - preheat the oven to approx. 400F (I think that's about gas mark 7-ish) and bake the cake in the centre of the oven for about 40 mins. Turn out onto a wire cooling rack, then eat!!!
Have a good day!!! :-)
