coconut - how du u use?

I usually buy dry coconut. I like to use it in quick breads, cookies, oatmeal, smoothies, cake, frosting...I love it.

I use coconut for making ice cream and in cakes. Also to make coconut ice although I don't do that very often as it is so high in sugar it's very bad for you lol. We can get dried coconut which is fine for ice cream and cakes. When I buy fresh cocobut from the supermarket i tend to eat it fresh, with fruit salad sometimes.

Generally, in our region coconut is used in the form of crush coconut and used in variety of dishes like desserts (coconut sweets, coconut kheer, coconut pudding), in meat dishes to make curry like Mughlai chicken, white chicken etc. While it is also used to decorate different sweets as well. I personally like coconut taste in chicken curry dishes.
