How do You LikeZucchini?

For years I've loved to fix eggplant both friend and also eggplant parmesan and I really love it but someone gave my husband some zucchini so for the first time ever this year I've fixed that and I think I like it even better than the eggplant. So far I've just had it breaded and fried but I know there are lots of other things to do with it. So, let's see your favorite suggestions of recipes using zucchini. I know a lot of people like zucchini bread and I think I'm going to give that a try. Any and all suggestions will be appreciated!

Well anniepa, I like zucchini just about any way. I like to cut
it up with some spices and onions and tomato sauce. That's a
nice way to make it. Another way is cut it up put some olive oil
or butter and some garlic. Another way is just boil it and have
it plain. Like I said I just love zucchini!

I have a recipe that uses both both zucchini and eggplant which my mom gave me. It is very simple to prepare and make and I and my family really like it, I hope you like it too.
It is very simple, it takes one or two zucchini's cut in medium slices and one or two eggplants, peel and cube the eggplants medium sized (normally I use one large zucchinni and two medium eggplants but it is variable depending on a persons personal preference) and a cup or two of fresh white mushrooms cut in quarters if large if small they can be used whole. Mix them in a bowl and season with salt, chopped garlic, oregano/thyme and mix with a olive oil. Place them in an oven tray and allow to stay for about an hour, this is not essential as it can go into the oven immediately and still tastes fine but it does taste better. Then bake until done/slightly toasted. This is delicious served with grilled meat or grilled fish.
This recipe is very adaptable and the seasoning may vary depending to peoples personal preference, it is possible to make the dish without mushrooms as sometimes they run out, I have never tried with frozen or canned mushrooms so I cannot say if it will work.

Annie, I like to chop up zukes into my spaghetti sauce about 15 minutes before it is done. It is very good then on top of pasta, with garlic bread.

zucchini bread is delicious. i also like to slice the squash , both yellow & green , slice onions, peppers & chip up a tomato put all this in a skillet w/melted butter, garlic & oregano & a little water & just let them steam in that till tender. i always put a lid on the skillet.

It SUCKS, like all Greek food.It is only good if you are constipated. The diarrhea is the side effect, guaranteed.
That's what we all (5 of us) have on vacation in Greece, every day for 2 weeks.

I love zucchini...its mild taste makes it very versatile. I love it in ratatouille, zucchini bread, sauteed with other veggies like onions and peppers and made into a sandwich or served with pasta, fried zucchini...I also like mock apple pie made with zucchini...it's a great way to use an overabundance of zucchini from a garden. I always make with the loads of zucchini I get from my parents who grow it.
1 pie crust, unbaked (you can skip the crust to make more of an "apple" crisp)
5 c. sliced zucchini, peeled and remove seeds (use peel for zucchini bread)
1/2 c. sugar
1 tsp. cinnamon
1/4 c. real lemon juice
3/4 c. water
CRUMB TOPPING:
1 c. flour
1/2 c. brown sugar
6 tbsp. non-hydrogenated margarine
1/4 tsp. salt
Bring to boil zucchini, sugar, cinnamon, lemon juice, and water; simmer until soft. Pour into an unbaked pie shell (or just greased pan); pat crumb topping over mock apples and bake at 325 degrees for 25 minutes.

I love zucchini bread but have never attempted to make it myself.
I usually slice mine up and then cut it in half again. Then I stir-fry it for a few minutes in a little bit of olive oil and sprinkle lemon-pepper over it while it cooks.

Ummmm...it's yucky! LOL
I don't eat it. I tried to like it, really I did but even fried I just can't like it. Eggplant is even worse.
The thought of Zucchini bread just doesn't sit well with me either. But I have a bunch of family who make it all the time. That is worse than getting a fruitcake at Christmas. LOL But I hope you find some great recipes!

I like zucchini we just picked our first one last week and made zucchini bread. Every recipe that I have ever seen for the bread calls for unpeeled zucchini, and I have never liked the bread and I couldn't figure out why until this week. My middle child was making me crazy about making it so I told him to get started and he peeled the zucchini he either couldn't or didn't read that part of the recipe, but anyway we went ahead and did it that way and it was so good. I couldn't believe that I liked it.
