what to do with egg whites?

I love making creme brule however I never know what to do with the egg whites. After much searching I found a pretty good muffin recipe that calls for egg whites but aside from that, what else is there for me to do with them? I tried scrambled egg whites and watched them disintigrate. There must be more that just these muffins!

Meringues! The best ever thing to do with egg whites. I do mine in the oven but I've heard you can do them in seconds in the microwave. Fab in desserts and very minimal in calories for the effect!

You can make meringues in the microwave?!? I have tried making them in the oven but the just done turn out very nice at all.

i would add some whole eggs to them & then scrambled them .that works for me.

u could divide them & do that twice, maybe invite the neighbors over for a scrambled egg supper. they are to beat. if u wanted to make a cake alot of recipes call for just egg white.

That's right. I wasn't really thinking about using half now and half later. Just how long is the shelf life on egg whites? Right now I have them refrigerated in a sealed glass container. They have been in the fridge now for about 3 days, should I be thinking of tossing them or are they still good?

I tried that once and it worked out well however this time around I think I have too many whites... I have 8 egg whites!

I use egg whites instead of whole eggs when making sponge cakes or fruit cakes. You still get a nice cake but its a bit lower in fat than using the whole egg. Or you can make meringues! I have seen them made in a microwave by a friend but not tried myself. There are quite a few recipes online for making meringues in the microwave including on the BBC website:

Our newbies are really interesting!
Well, Burnout, I don't know how far you want to go with your cooking, but you can make fabulous souffles with egg whites. The one I like best starts with whipping those eggwhites until they're almost hard, and add whipped-up cooked slamon. It is incredibly healthy, and really great. It can be made into small balls and served as hors d'ouevres. The same goes for spinach, or salsa, or any number of goodies. Sometimes I just use the whippedeggwhite balls for snacks to keep the calories dowm and the nutrition up.
You can do the same thing as desserts, mixing in whipped chocolate or fruits or even liqueurs.

You could try making an angel food cake. I used to make a lot of custards, and I always made an angel food cake with the leftover whites. You can also make meringue cookies which are absolutely delicious! You could also invite me over for your creme brulee!

I could use a recipe for angel food cake. I love it but I have only tried making it via store bought cake mix. The last mix I bought burned before it was baked! Burned on the top, gooey on the bottom. I would like to try making it from scratch.

you can use egg white in making an icing. making merenge or flower cake. theres a lot to do to use the white egg. or if you want its not for cooking. use it in your face to make you more younger. wipe it all over your face let it dry and then wash it.

What?!? You can use egg whites as a facial mask. I have never heard that one before! I think I am going to try and bake a cake with them... I have some leftover creme anglais that might go well with an angel cake and maybe some fresh raspberries. mmmmmmmm... sounds pretty good!

I know that this is a very old question but I just have to add my two cents any way. My granddaughter likes meringue cooking. They are made from whipped egg whites with some sugar and cream of tarter and other goodies like peppermint piece or chocolate chips. there is a host of other things that can be added to the meringue. It is then baked until the meringue is baked at 250 degrees for 50 minutes then turn off the oven and let cool in the oven
