Sinigang is a Philippine dish famous for the variety of ingredients. Though considered as a soup, it is not eaten as is, but rather combined as viand with rice. Sinigang is typically sour.
Sinigang often incorporates stewed fish, pork, chicken, shrimp or beef. Sinigang's characteristics taste is attributed to the ingredients that gives it sour taste, not to the meat flavor.
Meat is stewed in tamarind (which provides the sourness), green pepper, tomato and onion. Other vegetables cooked in sinigang may include okra, labanos, kangkong, sitaw and eggplant.
Another variety is prepared with guava and is less sour than those with tamarind. Raw mango, calamansi, santol and kamias can also be utilized. Powdered soup base or bouillon cubes for sinigang are also used in place of natural fruits.
My most favorite sinigang is the beef sinigang and the shrimp sinigang.
I like the taste of their soup. I also like the sinigang in guava soup.
It's a little bit sweet than the traditional sinigang which is usually sour.
I know a lot of you here in the Philippines loves to eat sinigang.
What is your most favorite among the many varieties of sinigang?
Happy eating...

My family's favorite is pork sinigang. And what makes my heart bigger is that, they don't like any other sinigang but mine. One time my mother-in-law, upon knowing that my daughter likes it so much, cooked and sent us. My daughter was so excited but when she tasted it, she commented, "Mommy, I know it's not your sinigang. It's not the same. Your's is better." She ate it anyway, but her comment is heartwarming.... hay, i love her so much!!!

Yum... This has to be my favorite dish. I've always loved shrimp and milkfish (bangus). What my mom would do (since I like both), she'd mix both in the soup. I really love this. She would cook it either with kamias, guava or tamarind but I'd prefer tamarind better.

Mixed shrimp and milkfish? Maybe I should try that..
Me too I preferred tamarind than kamias or santol but I like guava for substitute. Shrimp sinigang is really good..

Uhuh... It's really good. My mom makes the best sinigang. Really. And it's not because she's my mom and all. I've tried a lot of versions but hers stands out.
BTW, thanks for the BR.

Hi there Warrior!
I like pork sinigang the most! But that's because I like shrimps better when they are buttered-garlic or steamed and I like fish when it's fried or sweet and sour better.

Hi nanayangel!
Pork sinigang is the most famous among all the varieties of sinigang.
I also like that. And that buttered shrimp is really good.

Mom rarely use the tamarind for sinigang. She uses cane white vinegar. I like sinigang na bangus & pork with gabi, pechay and gabi. I miss eating it because Mom rarely cooks sinigang these days. :( It's her specialty, I don't trust myself in cooking sinigang bec I might not be able to eat it.lol :)

Just like you I love beef sinigang and shrimp sinigang! These just have a distinct taste from pork Sinigang. I haven't tried the one that is cooked with calamansi or with pure Sampalok. My favorite vegetable in Sinigang is Labanos (radish) and I hate okra.

I love sinigang, it's one of favorite dish especially when it is raining. However, my most favorite sinigang dish is pork rib sinigang and shrimp sinigang. I like it real sour and hot. I like the pork rib sinigang with lots of gabi and some sweet tomates and kangkong. Really delicious and tasty.

I'm not into sinigang in guava (sinigang sa bayabas) but I really like Beef Sinigang in Tamarind. That's the best for me. It's like pork sinigang, with more depth to the soup because of the beef.
