When my mom was alone and tired I suggested for her to make life easier. I told her to either make meals when she was feeling good and had days off then freeze it so then all she had to do is reheat it. Or there are many meals out there that do not take next to nothing to heat up. I do not know if this would help but good luck in finding a solution.

The good thing of cooking for yourself has to be that you cook your favorites all the time.
I will suggest to stock up on soup cans, and a couple of ready salads, things to make sandwiches and staff like that for the days you do not want to cook.

I used to just open a can of soup or have a sandwich for dinner.
Now my boyfriend cooks dinner every night and i gained 20 pounds in 5 years.

I can't tell you how many times I come home from a long day at work and then find that I have to cook dinner just for myself. That is going to happen to me tonight actually because my boyfriend will be at class until pretty late. It really is a shame because I never feel like cooking anything really interesting if I am going to be the only one eating it. Usually, I will cook something pretty fast and simple and then just leave the leftovers for my boyfriend to eat when he gets in. Or I will sometimes take some leftovers to work with me the next day for lunch.
As for dinner tonight, I think I will just cook up some chicken sausage and some greens. This way it won't require too much effort and I can get back to working on my halloween costume.

I get like that when it is just my daughter and I at home. I get so tired from working all day and then it seems like a waist to cook for just 2 people. This is usually when we decided what to order and order in.

I don't live alone but my two sons are grown so I do spend a lot of time by myself. I usually cook on the weekends. Last weekend I fixed a big pot of chili on Saturday and I fixed cheese stuffed meatballs on Sunday which both meals had left-overs. I take these and put them in individual containers in the freezer for just such an occassion of being at home by myself and not really feeling like cooking!
