Olive oils are classified according to their level of acidity. The first cold pressing of a high grade of olives produces the finest olive oil, with a maximum acidity level of only 1 percent and this is called extra-virgin olive oil. Further processing by heat produces more oil, which decreases in quality and flavor. It is among the healthiest of oils. I like it for dipping french bread.

All i know is that olive oil is supposed to be better for you, but also it is way more expensive than regular oil.

My parents don't use it, but I want to, but I can't since I still live under their roof... Heh heh heh.
Anyways, I'd rather use it more than CANOLA oil because canola doesn't seem appealing to me than olive oil.
I don't know the benefits, but virgin is pure olive oil, extra virgin is probably extra pure straight up olive oil.
