What is the veggie you cannot live without?

Odd question, huh? Well I cannot live without green beans. I absolutely love them. I can mix them with just about anything, potatoes, onions, casseroles, soups, etc. You can fry them, and bake them.
In my house they are a staple along with the potatoe.
So what about you?

I can't live without soy and it's many uses. I probably eat soy every day, especially as meat alternative choices and in soymilk.

I really love potatoes, mashed, boiled, baked and especially fried; the latter doesn't really seem like a veggie but it is honestly! My husband can eat potatoes raw, I can't go that far.

The veggie that I cannot live without is carrots, hands down.
I love carrots, always have. I like them raw or fresh. Sliced, cubed or grated.
I just love carrots and can do so much with them. They make great muffins also.
Plus my dog loves carrots as well. So we eat carrots together as a snack.
I can fry carrots, bake them, boil them, grate them in a salad and more.
Carrots are a staple in my house.

I'm that way with mushrooms........are they a veggie? lol
I can use them in absolutely anything, hot or cold, raw or cooked and they never lose their appeal. They even go well in mashed potatoes! LOL

Corn or hominy. Sounds like you've got an avenue for green beans no matter the occation.

Potatoes
That's the only vegetable I can meat without meat lol
I love french fries,mashed potatoes,tater tots and hash browns.
