Help with what to cook for friend

My friend is having a baby and her husband is stationed in Korea. She has a 5-year old and no one to help her when she gets home from the hospital, so I offered to make her some meals so she doesn't have to cook dinner at night. Does anyone have any great ideas for easy things to make that are transportable that she can just heat up for her and her son? Preferably something with minimal ingredients that's easy to cook and reheat. Thanks for any help you can give.

Meat loaf is an easy thing to make and transport, or how about speghetti, tuna dishes, casseroles. I have a friend that dont' make very much at her job and so when I cook I usually make just a bit more an I put it in ziploc bags and put it in the freezer. I find a quart ziploc bags makes a nice portion. I think anything that you cook you could do this and then take to her and all she would have to do is pop it in the microwave.

hi raiven! oh that is so nice of you to help out your friend. well, i will only be so glad to help you as well. for one, here in our country, new moms are made to eat chicken soup. chicken is boiled and added with some vegetables. it is supposed to help new moms regain strength and induce production of milk. another one could be liver dishes. liver is supposed to replenish the blood supply because of its iron content. or so they say. they maybe some potato dishes, as long as they are nutritious. i think aside from convenience, nutrition should be of utmost importance. :-) hope everything works out well for you. take care and God bless you for you have a good heart! :-)

an easy bake lasangia, chicken cassarole, shicken salad for quick sandwhiches with a salad or soup, macaronnie and cheese, I always loved the I think its called yankee pie...you use mash potatoes...any veggie,,a cream of or cheese based soup chicken or turkey or hamburger meat and then more potatoes whippen on top and bake...a little cheese on that before you serve ....yummy yummy yummy!!! hope i gave you an idea...She is lucky to have a friend like you!!!!

I find that tuna casserole is ALWAYS a winner for moms with new babies! Most five year olds love it, and leftovers can be reheated or frozen for later use. To begin, I put a layer of pasta or rice in a rectangular baking tray, then cover with a white sauce (soymilk works if you need to keep it dairy free) to which I've added a large can of tuna. An optional layer of canned pineapple pieces, in between, is yummy, and vegetables, like peas and corn can be added to the sauce. I've found 'tho, that keeping it simple suits the most colicky or fussy of new babies...just in case : ) I then sprinkle with grated cheese, and a less healthy but delicious optional extra, is a packet of potato chips crunched up and sprinkled over the cheese, which most five year olds will love! You can heat thru before you deliver it, or take it by as is. Taking by something small and simple, just for the other child, can go a long way too.
