What did you have for dinner (and did you enjoy it)?

Tonight we had a new pasta dish. It had black eye peas, mango salsa, with whole grain penne pasta, black beans, with celery, onions and bell peppers. I also had corn tortilla shells on the side. The meal was absolute scrumptious, So much so that I had a second helping. Needless to say,{b]yes, I thoroughly enjoyed it.[/b]We also had water to drink.
For an in between meals snack, my wife prepared a fresh berries with rainbow sherbet, it had strawberries, blackberries, raspberries, blueberries and apples, along with the rainbow flavored sherbet. Talk about a rainbow of flavors.

Your dinner and snack both sound excellent!! Your dinner is healthy, especially using whole grain pasta. If the pasta was semolina free, it would be even more healthy.
Great idea for a snack too! Love the use of multiple fruits! If the sherbet was sugar free, that would be more healthy. The fruits could get costly if fresh, but perhaps frozen would be lower priced?
My husband and I went to a Valentine's party at a friend's home. There were 13 couples there. Nice thing is that all couples are happily married and treat each other well. Dinner was mixed greens salad with sliced strawberries, mandarin oranges, and candied nuts along with a sweet/spicy dressing. The entree was sweet & sour chicken tenders on wild rice with mixed steamed vegetables. Desserts were a layered crushed chocolate cookies and creamy filling with whipped cream. They had been frozen, so were a bit frosty and served in nice sized heart shaped ramekins, one per each couple to share along with heart shaped brownies for each person. Most things were healthy except for the sugar content of the desserts. It was a nice time had by all.

Lower the priced frozen you betcha. All together one frozen bag costs around $4. Separately the all costs around $3 each. So we get the frozen bags instead. and have the same flavors and even more if we get more than 1 bag. The sherbet was sugar free. One of our kids gets a bit loopy when they consume sugary products, so we have to keep everything on a even level, and use on the natural fruit sugars.
Okay so, when is the nice couples get together, what do we need to bring, what's the address, and what day and time. We'll arrange baby sitters for that day.

Hello hdjohnson! Wow i bet you're still full? You had a very sumptuous dinner! I would love to try what you had for dinner. As for me, we have leftovers from lunch, i had what i called REPEAT - meaning the same food i had during lunch. LOL! I had squash and stringbeans in coconut milk and bicol express (pork in coconut milk with loads of red chilis)

For dinner I had roasted chicken with savory herb stuffing, along with chicken flavored rice, I did not feel like fixing anything else. I cooked the chicken before I went to Church and the rice was leftover. I took a nap and woke up feeling more tired than I did before I laid down, thus I quickly got together what was already prepared. I had peach juice with my meal, my husband had milk. There was no dessert.

I went out to have a kind of snack with friends. Was also good, we had a typical brazilian food called baião-de-dois that is made with rice and beans together and lots of cheese. Really good. And also coca-cola to drink. Was fun to eat out and enjoy my friends company. One of them came from Italy and it was about 2 years we didn´t see each other. So good food in good company is perfect.

I had fried rice with Tomyum sauce and egg. Then I ate a bread with tuna mayonnaise, very delicious :D. I still have an apples if I hungry in the middle of the night. Your dinner was great. Thanks to your wife, She did her best to serve your dinner :)

YummY that sherbert sounds so good!
My husband and I had pizza from Pizzahut last night because they gave us a $20 credit because we were mistreated by one of their emplyees and my husband had filed a complaint with them. I have to say that they were so quick to fix the problem and they not only gave us half off the pizza the night that the complaint was filed (because they called us back directly after the complaint was filed online and told us that they were preparing us a pizza)but the next day another Pizzahut representative called us and when my husband spoke to her, she gave him a $20 store credit. it was just amazing and I have a newly found respect for their restaurant, though I have always loved them anyway....

We have pizza on my 7year daughter's birthday on Feb. 7th, along with cake and Ice cream. I'm so glad to see they were more than willing to go above and beyond the call of duty to keep a customer, especially in this day and age.

For my dinner I had tuna salads which were made of tuna, paprika, tomatoes, cheese and pasta. It was very nice and light dinner as I don't like to eat big meals in the evenings. Together with my dinner I drunk fresh carrot juice, it's healthy and I like it.

Sounds like a good dinner. I had Meat Potatoe Pie The botom layer of this casserole is cream of mushroom soup. The next is ground beef. The next is mashed potatoes, and the next is lots and lots of cheese! mmmmmmmmmmmmmmmmmm.........

Boy your dinner does sound good as well. Since we aren't eating meat anymore, we are eating fish though. But you dish sounds like something I would have eaten when I used to eat meat. BTW welcome to mylot.

Hi,
I normally have a burger for my dinner. Alternatively, I eat a fried chicken with chips. It is not healthy though but I have no choice. sometimes I feel very lazy to cook by myself. If I have a time of course I will cook. Fried rice or noodle with omelet will be a perfect choice for dinner.

We had a chicken wild rice casserole with water chestnuts and green beans mixed in with french onions on top. Talk about delicious. I think it had chicken stock in it to make it creamier as well. My family loves casseroles because they are so easy to make. And you can prepare them in advance and just cook them later and they taste exactly the same.
