I have found that most of what I eat comes out of the freezer and goes in the microwave, contains large amounts of salt, and is lacking in nutrition. I have been eating this way lately because it takes very little effort, and it is difficult for me to motivate myself to cook.
I was wondering if anyone had any simple ideas on how I can eat better, by easy-to-cook meal ideas, and without having to spend much more money. Thanks.

A great idea is to cook large batches of things on the weekends and freeze them into individual portions that you can microwave. What about a lasagna, some spaghetti, or a nice pot of soup? I made four lasagnas about a month ago, cooked them, sliced them up and put them in the freezer. It tasted even better once it was reheated than when I originally cooked it!

I agree with the cooking in advance! Pre-cut vegetables so that it is quick to prepare a salad/wrap/stir-fry. Cooking Light magazine is my favourite for low-fat healthy cooking. It is important to eat clean. Your body needs proper nutrition through fresh fruits and vegetables. Cauliflower, carrots, broccoli etc are easy to steam in just minutes. I usually saute some minced garlic in a pan (with a bit of EVOO) and pan fry the veg for 2-3 minutes. Then add some crushed chili peppers (a pinch) and a tablespoon or 2 of water, cover. In a minute or so you will have nice flavourful veggies.
