Your uncle forgot to mention butter or margarine. Not a lot, about a half stick or quarter cup is plenty. I think my "cheese" a little thin so I use quite a bit of milk, and I do add a pinch of salt. I don't know about the nutrition of macaroni and cheese, but it is definitely yummy.

For us we do boil the pasta first. But I find that most people over cook the pasta and then it will taste bad. I like more of a firmer noodle for mac and cheese. Then when you put the pasta in the strainer, I put margarine or butter in the pot with milk. Then the cheese powder. Mix that all up and then add the macaroni and mix. Some people like salt with it but I don't. Some others like to put ketchup with it. Some people will put hot dogs or wieners in it too.
But most importantly Mac and cheese needs to be eaten right away. Once it sits even for 10 minutes, it is real gross.
I am Canadian which it is known that we eat more mac and cheese then any other country so trust me it can taste awesome. LOL
Please note that it was originally made as a way to give a cheap hearty meal during the war and it isn't really a healthy food. But yummy now and then. LOL

I agree with the others that you forget to put in some butter.
Leftover ham is also a good thing to add to it, just cut it up and stir it in.
Also some browned hamburger is something else that i sometimes add to it
To make it homemade you can use any kind of pasta noodle,Like the little shells, or the spirals with the milk, and butter, and you can use any kind of cheese that you like or you can add a mixture of cheeses to get a very different taste, and it is fun to experiment for something different. and it is not that difficult to make it your self.
