Looking for Chicken recipe to feed 150 people

At the six weddings that I have catered for we have done chicken teriaki and Meatballs in the teriaki sauce. Sams club has this wonderful teriaki sauce that you pour over the chicken and add water it keeps it moist but not to tangy like BBQ sauce is. I use chicken strips from sams also, you will need about 200 - 250 pieces. You can cook these the night before and the morning before you start anything else you want to put these in the warmer. What else are you having on the buffett?

We are also having sausage, rigatoni , cheese potatoes, salad and rolls.

Are the chicken strips from sams club frozen or do you get them fresh?

I got the chicken from Sam's frozen, It is also cheaper for me, For this many pieces it would be good to get the cheapest but make sure they are not fatty. I cook them in the oven the night before with just a little bit of water and seasoning. The morning of the day I stick the pieces into 2 different roasters, or warming pans. When I put them into the warming pans I add the teriyaki sauce with a little water into one of the pans. water is added to the teriyaki sauce for a milder taste. Into another pan I put a little bit of about two cans of Pepsi and half of a can of pineapple juice I Would taste this out for yourself before you tried it with others I use it with chicken and ham recipes all the time if it is to zesty for your taste dilute it with a little bit of water.

my aunt used to cater weddings. she went to instutional wholesale & bought their lemon pepper chicken, corn & the best rolls i ever tasted. the meal was absoultely delicious. the chicken was so tender & the meal was wonderful!!!!!!! all she had to do was pop the chicken in the oven.

Thighs and drumsticks are easiest to deal with. I would probably make chicken with rice and vegetables. Put rice on the bottom of a large pan, add vegetables, then chicken pieces. Pour chicken bouillon over the whole thing until it's covered by several inches. Bake at 350 until the meat is tender.
For 150 people I don't have specifics, but keep in mind that rice expands about three times when cooked. The vegetables can be anything from the kind you buy mixed in a freezer bag to chopped up green peppers, onions and celery to just about whatever you want to use. 150 to 200 pieces of chicken, but it might take more.

It is going to be on a buffet, so I don't want to cook it in rice...just the chicken. It will have to be kept in roasters to stay warm and heated, but we don't want it to dry out.

You can make sort of a chicken alfredo without the pasta for a buffet. Just get enough chicken pieces for everyone and boil all of the chicken in a large pot (or multiple pots). I suggest putting a decent amount of chicken bouillon into the water to give it some flavor.
For the sauce, in a large enough pot boil half heavy cream and half milk after melting a quarter part of butter (in other words, take the amount of cream and milk and divide by four and that's the amount of butter to use) add garlic powder and lots of Parmesan cheese, pepper, and salt (all this to taste of course...taste it as you go along..so dont add too much seasoning at once...add little bits and taste as you go. You should really taste the cheese and garlic.) When it boils, reduce heat to a simmer and let it reduce so it can thicken up....also you can put a little of the liquid into a bowl and dissolve some cornstarch until theres no lumps and add it to the sauce to make it thicker.
When it's time to serve just place the chicken in the roasters and pour sauce of everything...a nice elegant looking chicken dish...and tasty! ^_^

Sounds good, but we are having rigatoni on the buffet. I wonder if the sauces will be too much.
