Cordilleran Traditional Food

One of the best traditional food of the Cordilleras here in my country, Philippines is called 'Etag'. It is preserved pork through salt. Whenever we cook 'pinikpikan,' we add 'etag' like natural spice. Other than 'pinikpikan,' we can also add 'etag' with sauteed vegetables or any kind of cooking. What about you? What traditional food do you have that you are proudest of friends?
