How often do you take a recipe and make it your own?

My hubby loves to cook. It's almost a passion for him. The payoff for him is when we enjoy it. And this time it was a HOME RUN!! Chicken sheppards pie and it was delish! What dish have you made your own? I do variations on my meat loaf dishes. They are usually a hit.

When ever I find a recipe that I want to try I try it according to the recipe first then the next time I make it I will make it my own. It seems that the second time I make with a little touch of what I think its missing my family loves it so much more. I found a chili relleno casserole recipe it called for 8 cups of cheese omg heart attack on a plate you know. So I changed it up a little bit replacing the full chili's with diced chilis cutting the amount of cheese down to 2 cups and making it more like a quiche and omg my family loves it they ask to have it once a week.
here is the recipe that I created that my family loves.
4 eggs (Beat well)
2 cups of cheese
2 tablespoons flour
Salt
Pepper
1/4 teaspoon garlic powder
1 small can chopped green chili's
1/4 cup of milk
Mix all ingredients together beating very well till foamy and frothy pour into a well greased small square pan(My mother calls the pan I use a brownie pan) and bake for 1 hour or until golden brown and pulling away slightly from the edges.
Top with cheese and a dollop of sourcream if you want and serve.
Yummy yummy.

I tried to make Chili once. It was not a hit. Too thick, like paste. Sigh. Oh, well, live and learn.

actually I basically do it almost every time I cook. I change it up to fit mine or my husbands taste. I might go by the recipe the first time then start adapting to our taste thereafter. My husband won't cook really. He would cook a few things but this last year I can't even get him to do that. instead of using chicken in chicken enchilada's we used turkey that was left over from Christmas dinner since we used it the next day to make them. It was better then I even expected. I will definitely be making it again when we have leftover turkey again.

I almost always make the recipe my very own. I like spicy foods and I always have to add something that has some spice to it, to my food. I have to also make some foods separate from mine also for my hubby since he doesn't like it real hot.

this is a chicken gravy dish that i tried out and every one liked.
Ingredients : 400 grams boneless chicken, 1 cup sour curd(yoghurt), ¼ cup cashew nut paste, 2 cloves, 1 cardamom, 1 teaspoon cumin seeds, 1 teaspoon garam masala(hot spice mix), 1 teaspoon coriander powder, 1 tablespoon ginger garlic paste, ½ tablespoon green chilly paste, ¼ teaspoon turmeric powder, 1 tablespoon butter and salt to taste.
Method of Preparation: Take a thick bottomed pan and heat the butter. When the butter melts, add the cloves and crushed cardamom. Sauté briefly and add the cumin seeds. Cook till it turns golden brown and add the turmeric, garam masala, coriander powder and sauté till the masala blends well. Now put in the ginger garlic paste and green chilly paste. Sauté briefly and pour in the curd. Simmer and cook fro five minutes and keep stirring. Now add the chicken and very lIttle water and mix it all up. Cover the pan with a lid and cook till it is half cooked. Add the cashew nut paste and salt to taste. Stir well and cover with a lid again. Cook for about 15 minutes. Check if the chicken is tender and then remove from flame. Garnish with fried onions and fresh cream in the centre and serve.

I usually stick to the recipe when I first make it, unless there is something in it I just can't tolerate. If it's good, no need to change anything but sometimes you can come up with maybe adding something better that you & your Family would like in it.

I never make the same thing twice. I also love to cook, and each time I change it up just a bit more, add different spices, or more or less of certain things. It always comes out good, just always slightly different.

Hum, chicken sheppards pie sounds familiar, also a home devised thing as a way to use up cooked chicken on the second day. Wonder if ersmommy's hubby's recipe is like the one I do. I make a white sauce with finely chopped onions and some herbs, add a tin of sweetcorn and the cooked chicken and top with mashed potatoes. Any variation of vegetable can be added for the same sort of thing.

as i am a culinary student i do often try new things.......i take some recipes try out some variation in it....like instead of certain ingredient it try to put some thing else......i generally try it out at my home and then at my college or work place....as i love Indian cuisine...i try new thing in Indian cuisine.....i try to make fusion dishes as well one such dish is bell pepper with cottage cheese....
i cut cottage cheese in small cubes and deep fry them...try to keep them white as much as possible......then in a pan i heat oil to i add diced bell pepper and just saute it.....then to that i add the fried cottage cheese.....i add a pinch of turmeric powder which will give it yellow color......then i add grated cheese to milk and pour it over the saute bell pepper and cottage cheese.....but take it of the flame.....the cheese will melt and also add the seasoning before adding the milk.......

Sometimes it's to navigate food allergies- hubby is allergic to green pepper and strawberries. Sometimes it's because a recipe is too salty or has MSG or something else revolting in it. Sometimes because I am avoiding wheat or want to change the kind of dairy that's in something. And sometimes for creativity.
For example, today I took a quick biscuits recipe (from scratch) out of Joy of Cooking. I used half wheat flour, added grated romano and cheddar, dried onions, and parsley and a bit of pepper, oh, and kefir also due to needing more moisture. They were delicious. Somewhat crunchy satisfying and much more nutritious.
