Favorite baked potato toppings.....

i am mostly vegetarian. I love a baked potato. They are rich in nutrients and supply carbs without all the bread ingredients. I top them with cheese. Sometimes with salsa, or with salsa and cheese! I also make my own (meatless) chili and top one with that and cheese. Every once in awhile I top it with veggies and cheese. What is your favorite baked potato topping?

Hi maclingolinger, I enjoy them but don't indulge very often as they seem to take forever to cook through in the oven and I don't have a microwave to start them off in. But when I do do them I rub the skin with olive oil first, bake, then add tons of butter inside, topped with raw onions and cheese and black pepper, then pop back into the oven until all the cheese is melted.

mmmmm... that sounds good! (except for the butter!)...I think the potatoes baked in the oven are better than those which are microwaved actually. I can't explain exactly how but it seems like the inside texture is softer or something... they are just better!

Yes they are better done in the oven but I used to use a microwave to start them off with so they didn't take forever which they seem to do now. As for the butter it only gets used on toast and potatoes so that's pretty good, it's sort of looked on as a nasty foreign thing out here, for everything else I use olive oil.

REal butter is okay. If I desire to eat some butter, I use the real thing, not the fake stuff!!

I too love baked potatoes. The best to me are the red baked potatoes. My favorite topping is just the butter and plenty of pepper. In fact I'm having one with my dinner tonight. I never thought of salsa on top of it I might have to try that one day. How do you make meatless chili? I would love that recipe.

I like the red potatoes too! I make my chili with about half and half red beans and black beans. Then I put tomato sauce and water to make the right amount of liquid. I add fresh onion and garlic ... I use a lot because I love 'em! then I add spices: chili powder, salt, cayene pepper, oregeno and a little bit of crushed red peppers and parsley. I think that's everything. It's some good stuff. But you gotta get enough tomato sauce or paste or whatever to get it real tomato-ish!

Mmm, I love baked potatoes with all different kinds of toppings. I guess what I put on top just depends on my mood for the moment. Sometimes I like to add bacon bits (real bacon, not the fake), sour cream, sliced black olives, and grated cheese. That's a tasty combo for me. Once in a while I'll warm up yesterdays sloppy joe leftovers and add them on top with a little sour cream. (Day old sloppy joe mix is better for the potato on the second day, after it's thickened up some.)

Thanks for b.r. :-) Geez, after reading the other replies, I'm just going to have to try the broccoli and cheese. I had forgotten about that being a good combo, I used to get it for work lunch at Arby's long time ago. Will have to keep an eye on this discussion and see if others come up with some more intriguing combos to try!! Have a nice weekend :-)

Hm....Great idea on the sloppy joe mix! I like homeade chili on a baked potato... I'll have to remember to pick up some black olives, maybe that and fresh onions is what i have been missing!!

I like a little sour cream, chives and a little pepper . Also I can eat a baked potatoe with just a little butter and pepper I don't like to stuff it with a bunch of stuff I can't taste the potatoe if I do that,

Yeah, I don't like so much piled on top that I can't find the potato until the end, by then I am full of all the other stuff and can't really enjoy the potato! I did have a favorite tex-mex restaraunt that served a potato fajita that was great! It was a baked potato covered with sauteed onion, bell peppers, their sauce and chicken... if I lived close enough I'd run by there today! mmm

I usually make a potato into a meal with a little butter, plain yogurt or cootage cheese and salt and pepper. Broccoli and cheese is a good standby also, and salsa.
We don't eat much red meat these days, but when I was pregnant we would get huge baked potatoes with butter, chopped bbq'ed beef and sauce, sour cream, onions, cheese and dill pickle relish. Man those were good..and probably about a million calories...oh well. We don't eat them anymore.

Yeah, I had one of those huge stuffed potatoes before! They are good. But I am like you and don't eat the red meat much any more! I have to go with the cheese. I hadn't ever thought (and wouldn't have on my own) of using cottage cheese or yogurt on a potato. Hm.. is that really good? It doesn't sound good right off the bat!

I like backed potato with Heinz Baked Beans in Tomato sauce, with a slice of cheese on top.
I used to work with a company that produced filled potatoes the best selling varieties were Chicken Tika, Tuna, Sweetcorn and Sour Cheese.
But realy just with butter is nice.

I haven't tried most of those you mentioned, but they at least sound real interesting! I recall now I used to mix chicken and onion and cheese and broccoli together and top a baked potato with it! Hm..good stuff!!

Chilli and cheese is a great topping for making a meal out of a baked potato. I also like broccoli and cheese and the standard butter and sour cream if I'm having with a meal. My hubby likes to use salsa, with or without the cheese. I had a baked potato last night, just plain since I'm on a bland diet right now.

Those times I have had to be on a bland diet the plain ole bake potato was a life saver!! They are actually good with just a tad of salt and a dash of pepper. Actually, they are really good for you too!

I top mine with grated cheese nd pesto before i put it in the oven. Then when its baked enuff, I put sour cream, chives, and lots of butter and a touch of hotsauce

That all sounds real good!Well, all except the sour cream, I don't care for sour cream.. why anyone likes something that is already soured I haven't figured out!! I know lots of people like sour cream but I have never developed a taste for it.
