I kept thinking the same thing when I watched Hells Kitchen. I always laughed when they would do the taste challenges, I'd say, smoker, non-smoker. I was usually right. I wonder if it just doesn't occur to them that smoking will do that to there taste buds or it's just a bad habit they can't break

I never watched Hell's Kitchen, but do know a lot of people in the food service industry and smoking is pervasive. Smoking is quite detrimental to the senses of smell and taste so it would seem counterintuitive that people who make their living pleasing those senses would willingly handicap themselves. But, they are in incredibly stressful jobs and smoking is a way of relieving that stress while still on the job.

I notice that every time I watch Hell's kitchen. I can't get over how much they all smoke. Quite shocking. Perhaps that is why they can't tell the difference between tuna and mushrooms:)
