The Left-over Make-over

Now that Thanksgiving is over, there are always tons of leftovers abound. What do you do with all of the left-overs that you have? How creative have you gotten with your leftovers. For me, recently, I have made two varieties of turkey soup and a turkey salad for sandwiches. It is amazing how creative we can be with the almighty leftovers that fill our fridge each fall season at this time of the year.

There are literally thousands of things that can be done with left over turkey and ham. Pretty much any casserole you would make with chicken could be made with turkey. I am going to chop some turkey and ham in to tiny pieces and make some fried rice and put them in there. I think that will be very good and very easy and even a little different. We have made fried rice that way as well. Another thing that we do is make omelets with the left over meats. Throw in a few of the left over veggies as well, especially if you do a fresh veggie tray, works out great. Enjoy!

Hi ladym33, Have used a similar recipe for Turkey and Chicken before and with fried rice also it turns out very well. I cannot casserole anything here but I get around it by having two saucepans going on the gas cooker and that way I get the meal done quicker and better. I use a lot of left over meals if I can. Waiting to get my Fridge fixed so I can freeze spare meals again.

We love Thanksgiving left overs. I have made some TV dinners with some and today I will make some pot pies and shepherd pies Then I will make some hot pocket sandwiches.

I figure on taking some heavy duty aluminium foil that I have and forming it around a bowl the after putting the pie in it freezing the pie and wrapping with saran wrap.

that's a neat idea. I bet that would work, but you would still have to be careful of it collapsing. That could be a bit warm on the hands.

Great ideas. I was actually thinking of small potpies for the family. But, wasn't sure which way to go, either get the small aluminum pans or come up wit another way to make them. I would hate to have to spend any money if I don't have to. Gee, I should have saved the ones I had last week from the store bough pies we had on hand. Hmmm. I'm sure the kids recycled them for me.

I was soo tired of looking at all that stuff in the fridge' today i made me 6 tv dinners out of it.I'm hoping later on it will look good to me again, lol. I usually make soup or a turkey pot pie but just wasn't in the mood for any of that for some reason.

That is a great idea. Making the tv dinners. Especially if you are constantly on the go, you can either pop it in the oven or microwave and have it ready in a matter of minutes. I used to do that when our kids were little, made all the leftovers into tv dinners. That way, when we got back from all of the sporting events going on, we still had a good dinner waiting for them.

Thanks, i'm not on the go anymore because i had to retire a few years back. They would have really come in handy when i was working. At least i got the fridge' cleaned out. Hope ur sunday is going good.

I am curious too. One of my neighbors said they make a sort of shepherds pie using the turkey and the sweet potatoes on top. Have you heard of anything like this?

I have actually. If you go to I believe it is http://www.food.com. There are a ton of recipes for different left over pies that you can create with your thanksgiving leftovers. What you can do, is do a layered pie, start off with some gravy on the bottom, then some mashed potatoes, then turkey, more gravy, potatoes, a little more turkey, then top off with the sweet stuff. Or use up the stuffing that way as well. Happy Eating!

trvl, I know what you mean. My head is now swimming with tons of ideas. I am trying to store them mentally, but, I don't think it is working very well. I was just thinking about the thousands of recipes that I have stored at home already and all the ideas that could be sitting right there waiting for me to explore. YUM!

Hello Chulce. We made turkey salad and turkey soup too. We make all kinds of stuff with the left overs. My honey is more creative in the kitchen then I am. We will freeze some of it for sandwiches. We did give some of it away to friends and family. But since there is only two of us we will still have plenty of left overs.

That's a great idea, to freeze the leftovers that is. I had not actually thought about freezing any of the turkey, only to turn it into other dishes, now I know what to do with some of it. Thanks for the great idea. It is amazing how many things you can actually do with leftovers. Wow! Enjoy!

free-man, How very true. Give it a shot. Given how much waste we tend to see in this world. It is always good when we can make attempts to save as much as we can and reuse if possible. At least we each are making an effort and sharing with others. Good luck!

I wouldn't have thought of it but we brought a used freezer this year and since it is big enough I thought I would freeze some of the turkey to keep it for sandwiches. I don't know how it will turn out after freezing it. Oh well will never learn unless we try it.....LOL Have a great day!

My family seems a lot different from your writings on what you do. We just heat everything up and eat it for dinner the next day and maybe the next or maybe for lunch. We dont do anything special with it but you guys are bringing some good ideas in my head. I'll remember to try out something with the leftovers.

alex, I am so glad that we could all help give you some ideas with your leftovers from the holidays. After a while eating it the same way gets, frankly old. That is why I always try to get creative with our leftovers. It keeps the kids eating it as well and we don't have any waste, or very little. Anyway, I figure I can change it up, is all the better! I'm going to make turkey and sausage gumbo tomorrow, but in reading your replies turkey pot pie sounds good too! I may have to do both! We still have lots of cornbread dressing, rice dressing, sweet potatoes,etc. left. Gee, lots of food!

Yum, gumbo sounds wonderful, especially with the day we are having today. Suppose to rain all day. But, that is all right with me. All of our guests here at work are leaving and heading home, makes for a quiet afternoon. Something I have done in the past with leftover stuffing. I take a large skillet, spray it with cooking spray, Beat up about 3 to 4 eggs, add it to the stuffing, then pour the mix into the skillet. Stick it in the oven at 325 for about 30-40 minutes until the egg has set up. Works great as a side dish for a breakfast meal or with some stew or soup. Enjoy!

Families problem always from meat leftovers, a wise women can use of those liftover by keeping in fridge and use it as the time they need. By this method, they can save their expendeture as minimum as they can, so they can increase their incom in other way Thanks for this good issues

We did not have a whole lot of ham left so we just ate the rest of that the next day. I was going to make split pea soup or bean soup with the bone, but we got really busy and I never got around to it so I ended up throwing it away. As for all the side dishes I made some steak and put all the side dishes out on the table for everyone to choose what they wanted, and most of them got eaten that night. I made fried rice and put turkey in it one day, and another day I shredded the turkey heated it up with some salsa and we had turkey tacos.

In our family we love Thanksgiving leftovers. We usually make turkey hash which is delicious and I make turkey homemade soup from the neck, heart etc.. of the turkey that was taken out before cooking. As for the turkey hash we cut up the turkey in small pieces, add leftover roast potatoes or use fresh diced potatoes, stuffing, onions and green pepper with pepper. If we use fresh potatoes then we saute them in olive oil then once they are cooked we add the other ingredients and let it get hot. We serve this with yams and biscuits. Its a great meal and I hope to be having it tomorrow.

That sounds very good. Thanks for the idea on the Hash, I had never thought of that. Yum. That may be dinner for tonight. We still have quite a bit left. We smoked a 20 pound turkey this year, expecting other family members to come to our home. But, alas, it only ended up being 6 of us, so a lot more for the kids to eat.

We did not have turkey this year just ham forgot to take turkey out. Usually we share the turkey and so know one has alot. I usually make another meal with my share of turkey and we also make turkey sandwiches. We have enough to last maybe three more days. I love stuffing so I never get tired of having it will a meal.

You are so right, it is an excellent way to save money. I will usually by a whole chicken, ham, roast, etc. These are other great items to keep handy, cook it once, then turn it into other dishes through out the week. It is amazing the many meals you can get out of one whole item like that. Enjoy!

To be quite honest. This year there wasn't much in the way of leftovers. George and I didn't bother to cook a large meal. Why would we when there were only the two of us? As a result there is very little in the way of leftovers which given that George has to work tomarrow and we have things to do...He'll probably eat them himself. As for me I can always find something to eat.

I know how that is. Well, at least I did before I had children. When it was just my husband and I. We didn't really have much in the way of leftovers. However, we always found another way to make them, just to keep it from seeming like a leftover.
