Do you ever have vegetables with breakfast?

I am going to try to get a serving of vegetables in a breakfast from now on. Do you ever have any vegetables with your breakfast?

I fry potato & onions together for breakfast some time. I love them & could eat them more often but don't need to. I guess potatoes is the only veggie i have ever fixed for breakfast. My grandmother had a great- uncle that use to visit her & he liked fried corn for breakfast.I thought that odd when i was a kid.

I love fried potatoes and onions with a little black pepper and you are good to go. So delicious.

tHEY SURE GOOD. I COULD EAT THEM EVERY DAY I THINK, i just don't need them but they are quite a treat when i do fix them.

I don't normally eat breakfast but a lot of times I cook it for dinner. One of my favorite ways to have scrambled eggs is to top them with salsa. If you can find a really good salsa that is all natural, it's a good way to add a serving of veggies to your meals and it makes everything taste great too so that's a plus. Eggs are great because I don't think there's anything that do go with them. I've scrambled them before with onions, peppers, spinach, mushrooms etc! So that is a really great way to add a lot of taste and get a serving of vegetables!

I typcially load up on fruit at breakfast,as I love to add fresh fruits to my oatmeal or my yogurt. However, if cooking an egg, it is easy to add vegetables into breakfast too! There is nothing better than a big omlet loaded with fresh, chopped vegetables such as green peppers, onions, and any other vegetable that suits one's fancy! I also love V-8 juice and it counts as a vegetable! (I hate the large amount of sodium though). We should all strive to eat more fruits and vegetables!

I do the fried potatoes and onions with fried eggs all the time and I occasionally dice in some green pepper too, but I really like sliced tomatoes with my eggs. They go together really well and it's a little healthier than eating the potatoes all the time. I guess I tend to do more veggies when I make omelets too. In addition to the ones mentioned above, I'll also use red peppers and mushrooms. I even made Mexican omelets once or twice which included chili with beans and salsa. Good stuff.

vegetable is one of my primary diet and i eat them any time of the day except in the evening, for breakfast i prefer vegetable that has lower glycemic index and fiberous carbs like squash, green peas, kidney beans and more..the best benefit with this kind of veggies is, because they are low glycemic they give me time realise energy through out the day withour rising my sugar level..

The only time I really have veggies with my breakfast is when I put veggies in my scrambled eggs. I have used spinach, broccoli, onions, and mushrooms before. Scrambled eggs with spinach in them is really good.

only when i make a proper breakfast - which i do about once a week. then i sometimes have scrambled eggs with tomatoes, onions and spinach. usually it is just toast, coffee and orange juice though. however i eat plenty of vegetables anyway so i think i don't need to have them with every breakfast.

I dont cook breakfast much but one of my favs is to fry up an omelet loaded with onions & bellpeppers!

I'm with everybody else here, omelets are the only breakfast way to get veggies - that and V-8! But seriously, you can put darn near anything in an omelet. Greens, tomatoes, zucchini, parsley, they all go good! One of our faves is to save the stalk from broccoli. Skin it and slice it thin, and it is amazingly good in anything you would use celery for.

I agree with antiquelady about the fried onions and potatoes they are the easiest and most delicious for me. I also like to make omelets, and within that omelet I love to cut up some green and red peppers, spinach and the like to throw in with my omelet. This always works out for me because I don't have a plain egg omelet and I'm getting my daily dose of veggies. I love breakfast I could eat this anytime.
