new ways to make chicken

i love chicken! i think most people do. it is so versatile. i can also usually find it on sale which is always great. i want to share some of my favorite ways of making it. most of these i have picked up over the years from family and friends. my husband loves chicken and dumplings but i'm not a huge dumpling fan (something about the texture). so one dish i love to make is kind of similar to chicken and dumplings. you take refrigerated crossants and wrap the chicken inside of them. put them in a casserole dish and sump cream of mushroom or cream of chicken soup over top and bake until done. very yummy! another chicken dish is to take a boneless, skinless chicken and beat it flat. put a piece of ham and baby swiss cheese inside and roll it up (kind of like you would do chicken cordon bleu). brown the chicken roll in a little bit of olive oil in a pan... then simmer until the chicken is cooked in cream of mushroom or cream of chicken soup. sometimes i also like to add crumbled bacon in with the soup. another favorite is to take thin skinless, boneless chicken and dip them in a bottle of italin dressing... then coat them in instand mashed potatoe flakes. cook them in a skillet with butter until golden brown. mmm mmm good! LOL. my last really fave way of doing chicken is to mix honey, orange marmalade, onion powder, garlic pwder, salt and pepper and a tiny bit of water together. pour th mixture over chicken legs and cook on low in the crockpot. i like to serve it with rice and broccoli. so what are some of your favorite different ways to cook chicken?

I love chicken too Pchickk! I prefer using the whole bird and cooking it in the oven. I usually use parsley, sage, rosemary and thyme (just like in the Simon & Garfunkle song! lol) mixed with a good dose of salt and oil. I rub it all over the bird and under the skin. Stick a whole lemon, that I've pricked all over with a fork, into the cavity and back until nice and crispy. There's only 2 of us and we usually have a half chicken left over. That's where the real creativity comes in! I love making quesadillas using the left over chicken with some grilled onions, mushrooms, crisp bacon and different cheeses. Or, if it's hot outside I'll make a nice pasta salad using the leftover chicken. Throw in some chopped tomato, onions, peppers, carrots.....just about anything will work. I use either a vinaigrette type dressing or something like Hidden Valley ranch dressing powder mixed with some mayo and lemon juice. Mmmm, mmmm, good!
