Preserving Foods

I want to start preseving meats and vegies around my house. Mainly I want to learn how to make jerkey, and pickles because we are going to slaughter our own meats and we have a vegie garden. So can anyone help me out or give me some direction in which to go?

I grew up in Alaska and it seemed like everyone there was turning their old refrigerators into smokers. If you can find an old (pre-1980) refrigerator (Not frost-free), it's fairly easy to turn it into a smoker. Smoked jerky tastes so much better than just dehydrated jerky, too. You can use a variety of woods to get different flavors. We used to smoke salmon in ours. There should be some kind of information on how to do this online somewhere. If you like, I could ask my nephew...he still lives in Alaska and hunts and fishes all the time...and smokes much of his take. Let me know if this helps.

We used to live like that and sometimes I really miss it! I canned or froze pretty much everything! We only butchered our own chickens the pigs and cows we took to the butcher. But, we used to raise two each. You raise the two - one you put in the freezer.The other one someone buys for the entire butchering price. So basically money wise it comes out about the same but you only pay slowly over time and not all at once.

You may use salt or sugar as a primary preservative...
Meat can be preserved through simply placing it into the refrigerator... This can be used to preserve your vegetables as well...
Those are the basic things i know...
