Do you always follow recipes from books to the letter?

I am fond of cook books and I have a good number of them maybe because the photographs are mostly enticing and very appetizing just looking at it. But when I do cook I don't always follow exactly the recipes I try to cook. Basically, most cook books I have call for ingredients that are mostly unavailable in our area if not hard to find. I always try to look for substitute ingredients that are not available or I sometimes experiment to find best alternatives. Otherwise, if most of the ingredients are not readily available in my kitchen, I don't attempt to cook the recipe at all because I'm afraid that it will not come out the way it should.
What about you, do you enjoy cook books as much as trying to cook the recipes in it?

I don't. The only time I do is when it is an old family recipe. I have several of my late mother in law's (God rest her soul) recipes and I follow those to the letter. She loved to bake a lot during the holidays and those are the recipes I have. I love to make her fudge recipes. As for other food items I love to experiment and cook what I have on hand.

Actually my mother-in-law never had any daughters and she I had a really great relationship. Her and I acted more like mother and daughter. I am glad that she had shared so many recipes with me. She was a wonderful mother who will be greatly missed.

It's a good thing your mother-in-law was gracious enough to give you her old time recipes. That's very nice of her. I wish I had a mother-in-law who's like that, though she also cooks but much of her recipes are native from their place in the province and she does not bake. In fact, I taught her some of my own recipes and some of my mother's best loved recipes as well.

Hi,
I like to see those cookbooks with colourful pictures.
but when reading the ingredients and steps to prepare it so
complicated,then I will give it up,I may not try to cook
that dish.
I cook for my family everyday.
I always cook simple food,need less time to prepare and less
time to cook it.
Some dishes may looks simple,but the steps to get ready the main ingredients
taken up lot of times,and I just not in the mood to cook those kind
of dishes.

Sometimes, it's really your mood that dictates what you could do in preparing the family's meal. Like you, when I am not up to it, I'll cook those dishes that calls for the simplest preparation and the simplest procedures. That way, I can save time, effort and energy. These are the times when I am most lazy to do anything in the kitchen.

If i am following a recipe for the first time, i will usually follow it exactly as written. When i have tried a recipe a few times, i may adjust the recipe to my own liking. Sometimes experimenting can be worth it.

I like to think I'm a very creative cook I take the recipes as a guide but typically just make thems up as I go along. This might not make the outcome perfect everytime but I've discovered some very interesting discoveries with food. My family also enjoys my cooking so it must be working I think if a person is comfortable with themselves and cooking enough they can try anything.

I don't always follow on what is written on the recipe book especially the measurement. Because sometimes when you are going to follow that, the taste is different to the extent that you won't be satisfied. Other than that I don't also follow the ingredients just because it is not available here or hard to find. More so I am looking for its substitute or sometimes it is not complete. I am just doing ways in order for me to make the dishes taste so good.

I don't know how to cook, and I'd love to learn the craft. Since I don't have the skills, I'll have to follow recipes, until I learn to develop my own taste and creativity.

I'm sure you'll easily learn because you have the desire and interest to do it. Cooking is easy for as long as you know the principles involved in every particular dish. You should start soon. I'm sure you'll love it when you get to hear others appreciating the dishes you lovingly prepared for them. I am no chef and am no expert cook but I know I cook good food because my husband still loves my cooking and so do my kids.

I really hope so! The thing is, I don't have time for that, at least for now. I'm busy with school. I'll consider taking cooking lessons after taking the bar exams and while waiting for the result.

If it is my first time to cook something according to the recipes from the books. Then usually I will follow it carefully. Because at least it can make sure my first try will be successful. Then next time I will be much more creative to add something new or remove some ingredients to make the dish perfect:)

Most cooks, do follow recipes to the letter only on the first try. I do too sometimes. It's good to know how the original recipe would come out and like you, at most times I change some measurements or alter ingredients to my taste preference.

i don't really cook. but once my mom made me do flan. she said that it's very easy to make but she forgot how much ingredients are needed. so she made me follow the ingredients on her cookbook. it turned out not great though. i don't know if it's the cookbook or if it's me. haha. but i never used that cookbook again.

I am not really fond of cooking but my sister does, I am more of the taster. There are times that I find her having a hard time copying the recipe because of the unavailability of some ingredients. But still she is wise enough to make any substitute.

How lucky you are to be the food tester and taster. I used to be my mother's taster when I was young. It's really hard for the cook to look for substitute ingredients. It happened to me many times before that I get frustrated when I couldn't find any feasible alternative to some ingredients. Sadly, it sometimes affect my mood when I cook.

i follow it sometime but when i am in a hurry i do not follow it anymore, lolz. luckily, the outcome is still good, and everybody still likes to eat it. but i am also fond of reading cook books. sometimes i just get ideas from it, so when it am at work i already know what to do

Getting great ideas from cook books is also my hobby. When I feel the desire to surprise my family with a new recipe, I scan my books and find at least 4 or 5 which ingredients are readily available in my kitchen then I choose which ever will make for a good meal depending on my taste preference for the day.

I did a recipe for a cake from a cook book. I couldn't describe the joy I had when I saw that the picture in the book matched the finished product as it came out of the oven! Now multiply that by 100 when I tasted it!
Of course, we can't avoid instances when substitutes are needed, but it takes a lot of practice, experience and know-how to use substitutes. If I find myself in need of substitutes, I follow the ratios or measurements for those precisely.
Baking is one of those things where you have to precise. If you're making something that needs season produce or season crop, you'll need to work your way around it.

You're right. There are some ingredients that you could not simply substitute for anything. A Blueberry Muffin is simply not Blueberry Muffin without the Blueberries, and a Blueberry can never be a raisin instead. In taste and in texture, it sure will make a great difference and therefore there is no substitute to a blueberry than blueberry as it has a distinct taste that no other ingredient can match.
Sadly, where I live, blueberries are imported canned goods that costs way to much. Sometimes, it's even worth 3 times as much as all the other ingredients combined. It's almost like putting gold in your baked goods. So I can never try to bake Blueberry Muffin unless I opted to buy the canned berries. Better yet, I'll go to a renowned bake shop and buy a slice or a muffin with coffee.

OH no! I am a bit of a picky eater, so I often exchange ingredients I don't like for something I like more, and so on. So I always add my own touch to recipes! Usually it turns out okay too, so why not?

I also have quite a collection of them as I like collecting them. I do cook from them but like you I do not follow the recipe word for word. I've been told that not following a recipe of a savoury dish will not make much difference but for sweet things such as cakes, the recipe has to be followed as accurately as possible as it can make a difference in the texture.
Cook books also give me ideas on what to cook as sometimes I find that I am out of ideas. I try to look for recipe books which don't use much exotic ingredients for these could not be found in my area, and I will end up not cooking the recipe.

No. If everybody followed the recipe exactly everything would be the same. Changing the recipe and adding your own flavor makes unique different taste and your own style. So why follow the recipe all it really is is a guide to doing what you do best and thats adding your own flavor.

I can feel you are a seasoned cook. You are exactly right to say that these cook books are good guides that is why they are called instructionals. Cooking is an art and therefore everyone cooks differently and preferences for tastes differ with every person's perspective. Thanks for your input.

What an interesting question. I was taught to cook by my grandmother and my mother. Although we sometimes used cookbooks, we seasoned to taste. That is, we added a little more or a little less of this and that. If I am cooking for my husband, he likes mild seasoning. My girlfriend next door likes heavy seasoning. Cooking for a potluck, I usually season light. I don't know what others like. I don't collect cookbooks, however,I still have the cookbook I was given when I graduated from high school.

Thanks for the response. It's truly personal preference for different tastes that decides how the cook in the family cooks for them. My mother also loves heavy seasoning and tasty meals and I am afraid I got that from her too although when I cook for people who visit, I try to lessen on some seasonings because it's hard when people would not like what you prepared for them. I always kept cook books but most times I follow my preference for adding seasonings when I do cook from a book recipe.

I follow recipes to the letter for one simple reason: I am a disaster in the kitchen!
I just find cooking really stressful and confusing. It definitely doesn’t come naturally to me. Maybe because I’m too conscious of messing up and because multi-tasking is tricky for me. I always choose very simple recipes because anything beyond the basics is beyond me!
I’ve melted plastic spoons before and burnt myself pretty nastily.
I’m lucky that my partner is really good in the kitchen. He does the best bolognese!

That would be horrible to get yourself hurt while cooking, but any man would love how you go out of your way to cook for him. You are lucky that your partner cooks too. I'm sure you have it in you, it's just a matter of time. They say that when you lovingly prepare a meal for your partner, it will surely turn out right.

I don't use cookbooks anymore though I have a collection of them. I prefer to download recipes from the net, it's easier and more updated. I don't always follow the instructions and even the ingredients, I try to substitute and do some modification, specially if some of the items are not available.

We're on the same boat. It's especially hard to look for so many ingredients in our country that are coming from the US market. Most times these ingredients are very costly and there's no choice but to look for cheaper alternatives that won't affect the taste that much. Thanks for the response and have a nice day.

Yes, I too like looking at the pictures and reading the recipes in cook books or in magazines.
It is often enjoyable just to do that even if you don't want to cook a recipe from there that day.
When I am making a recipe sometimes I will substitute one spice for another. More often I will leave out a spice or two altogether because I don't like it or because I don't have it at the time. The recipe usually turns out fine without it.
Sometimes if the recipe calls for 3 eggs I will only put in 2 and it turns out okay. You can usually find a list somewhere of substitutes for various things. I have tried that a couple of times too and it was a success.

It's nice to know that a lot of people just like me, are trying recipes from cook books and it's even funny to know that just like me, not everyone are following recipes to the letter. I guess it's always a cook's preference for different things that matters. These cookbooks are just kind of inspirations and although the authors are maybe experts, people tend to look for ways to be their own chef.

Same here, it's hard sometimes to know what a dish would really taste unless you follow recipes to the letter, but it's just wishful thinking sometimes that I want to cook recipes that call for ingredients that are not available anywhere where I live or ingredients that cost too much making it highly improbable to make for an ordinary day's meal.

When you are just starting to venture into cooking, that is what you will usually do. But I don't agree with you that you are not a good cook. The fact that you can follow recipes means you know what is asked and therefore you can cook. You'll find later that it's just a matter of practice to master your seasoning mixes. Like you, I sometimes follow as much as I could in trying new recipes but still I sometimes add or deduct from the measurements of a recipe ingredients especially salt or fish sauce for Asian dishes.
