I am getting so tired of having chicken the same way. Do you have any ideas on how I should prepare my chicken tonight? I have all sorts of spices in my cabinet, gravy's and sauce. All ideas are welcome!

Well I think a nice stewed chicken, marinate your chicken in some lime and your spices then, cut up some onions, garlic and so on. then cook your chicken...cut it up in small cubes or smaller pieces. when it cooked add a sauce of your choice with some additional spices...simmer for a bit (might have to add water or stock at some points). If you go for a tomato based sauce feel free to add some nice sweet peppers and green peas. If you go for a more herby sauce maybe like a pesto...cook chicken all the way through maybe steamed, the grill to get some nice grilled marks and put some tasty pesto on top. If you have like a asian sweet and sour sauce, fry the chicken first or bake the chicken in the sauce...add some fresh ginger and garclic to the raw chicken first... Good luck hope you find a tasty creation

Maybe you could try Chicken Curry or Grilled Chicken. For a healthier menu, you can opt to cook chicken salad. I love hot chicken salad. You could actually check out a few recipe sites to give you more details on the recipes I just mentioned. If I were to choose among the three I've mentioned, I'd go for the chicken salad. Then you can use whatever dressing you prefer.

We personally like to have lemon pepper chicken. I prepare it by soaking my chicken in lemon juice and then season it with lemon pepper seasoning. I then usually grill it on my indoor grill. I serve it with salad and a vegetable. YUMMY!!

I particulary like Chicken with mustard. I add some mustard powder to diced chicken in the pot. I use a slow cooker. The powdered mustard is pure and has no additives in. I dice and add onion and then a sprinkling of chilli powder and mixed herbs. When it's cooked through, I add a tablespoon of raw yoghurt and stir it in. Then I serve it with rice. As I work from home, I do most of the cooking each night, and this is one dish that I find quick and easy to prepare. _Derek

Hi If you are ok with spicy food, you can try this spicy Indian Kadai chicken: Ingredients: Whole Chicken (boneless) 1 Kg Chopped Onions (medium size) 3-4 Chopped Tomatoes (medium size) 6-7 Ginger Paste 2 tsp. Garlic Paste 2 tsp Chopped Green Chilli 3 Black peppercorns 6 Whole dry Red Chilli 6 Coriander Powder 2 tsp Garam Masala Powder 2 tsp Red chilli powder 1-1/2 tsp Turmeric Powder 1/2 tsp Salt to taste Vegetable oil as required Fresh Coriander leaves, chopped 2 tsp Method of Preparation: 1. Thoroughly clean the chicken and cut into pieces. 2. Heat oil in a heavy-bottom pan (kadhai). Add chopped onions and green chilli and fry until light golden brown in color. 3. Add red chilli powder, turmeric powder, garam masala, coriander powder, ground black peppercorns and salt. Mix well. 4. Add tomatoes, ginger, dry red chilli, garlic paste and cook until the tomatoes become tender. 5. Add little water and bring it to boil. 6. When the gravy becomes slightly thick, add chicken pieces and coriander leaves and mix well. 7. Reduce the heat. Cover and cook for 10-15 minutes (or until fully cooked).

Here something I have created myself. I use this method last time and it was tasty. First, you marinated your chicken with your favorite marinate you used for barbecue. For me I marinade my chicken with oyster and chili sauce, some shallots, garlics, lemon grass and a bit of salt and MSG. Then I leave it to rest for few hours. Longer is better. Then I wrap it with aluminium foil. I prepared the steamer. Once the water in the steamer boiled, I put my chicken which was wrap with aluminium foil. I steam it for about an hour. After an hour, I pick it up and leave to rest for a while. Then it was ready to serve. You can use any ingredient you want and be creative. You will find that the meat is very tender and the spices will give the chicken a lot of flavor.

I was invited to the house of my friends the other day and they had chicken a la orange. It had been years since the last time I tried it and I really enjoyed very much the nice taste. So I asked them for the recipe. I haven't tried it out yet, but it sounded quite simple and quick: They prepare the orange dressing: juice of 3 or 4 oranges, in two spoonfuls of honey, they salt and pepper (a lot, but that's personal taste) and they boil it. They sear the chicken until the skin is crispy. They then cover the chicken with the orange dressing and they let it for around 10-15 minutes in the oven.
