Do You Measure When You Cook?

I can follow a recipe and I measure some things, but I rarely cook without adding my own seasonings or ingredients. Even if it is mac and cheese I add stuff to it lol. I usually measure when I bake. When I find a recipe in a book or online, I sort of customize it to my liking, or if I don't have some of the ingredients, I will substitute other things that sound good to me.
What about you all? Are you a strict measurer/recipe follower or do you experiment with what sounds good and customize your food?

Usually not. I have a pretty good feeling for these things and know the right measurements even without measuring, because I have been cooking for many years already.

I start out measuring, but after a while I just guess at amounts. My husband likes to measure though.

I use to cook once in a while (not baking) but I just make calculations of every ingredient that I add in the main dish. For example, I pour soy sauce from the bottle directly to the fan, a dash of salt added meaning I have to sprinkle it by my fingers, and so on and so forth until the food is done. I just pray that the food tastes good before I placed it in the table for my family.

When I try a new recipe I will follow the directions exactly. That way I know what to tweak the next time around and I make notes on the recipe itself so I'll know what is needed. I've been cooking for over 40 years so I pretty well know what will work and what will not when I read over recipes. But I still measure when I'm baking. For the meats and vegetables you can add or take away without harming the taste of the final product. For baking a change in measurements may prove to be a costly mistake.

Sometimes I'm using that but most food I cooked were natural and known. If taste is the problem we must know how to calculate and which ingredience are missing... If the food required measuring cup or recipe should be used for good result... see you around
