Turkey Curry!!

That's it - it's official, Christmas is well and truly over - we've had the turkey curry and there is not one bit of Christmas food left to get rid of!! What is your favourite way of using up your Christmas leftovers?

We are still eating leftovers. I have no earthly idea why I bought such a HUGE turkey this year, but I did and we will proabably have to throw it away after tomorrow what we don't eat up. My favorite leftover meal is turkey tacos. We had them the day after Christmas and last night we had turkey burritos. Everyone in the family enjoys them and we could probably eat them every night.

When I make the burritos I usually over stuff them and all the salsa and sour cream comes puring out all over the place. My husband is much better at rolling burritos then I am. He is the official burrito assembler in our house...lol

They sound really good, I do enjoy Mexican food myself. I love chicken and vegetable fajitas, but usually get in a right mess with salsa and sour cream!!

We are making turkey salads to take to work. As a result of some over zealous efforts with rice salad, we have a fair amount of that to add!

Rice is a strange substance though, when you cook what looks like a little it just goes on and on!!

Doesn't it just? Most recipes say a cup - and they mean a tea cup, and we all use something close to a coffee cup/ mug, and then wonder why we have too much. Deviating, you may recall that my partner has a gluten allergy, so we buy different pasta to account for that. GF pasta is around four times the price of wheat pasta, hence we end up cooking two pasta dishes at once- and hers cooks much quicker than mine. So you have to really watch the cooking. The real downer is that it does not do well cold.

Good morning, i didn't cook a turkey , wish i did have some leftovers. I always make a turkey pot pie, turkey salad & i love turkey sandwiches. Sometimes i will make soup which i love to. Happy new year.

I have to admit to not being the greatest turkey fan, personally I wouldn't bother with one myself, I much prefer chicken - but you know what these men are like. my hubby loves his turkey and turkey drumstick at Christmas!!

Oh yes, it HAS to be turkey curry!! I did make turkey and ham pie too with the leftover ham and turkey!

Hi oldchem! That's what we are having for dinner tonight. LOL My fiance is cooking the turkey leg (which isn't leftover btw) in the oven and then he'll make curry for tonight. We've tried that before and it's really delicious! We had roast beef with yorkshire pudding and veggies for Christmas dinner and we just reheated and ate the leftovers the following day. The leftover beef my fiance turned into beef and onion steak pie which was also lovely. I must admit he's a very good cook. He can turn something into a really mouth-watering dish. If we didn't had all the veggies I must say we could've turned it into bubble and squeak, wherein you mash all the veggies or shush them together and then make them into like fried fish cakes thingy.

I just love Bubble and Squeak and sometimes make it using fresh ingredients rather than waiting to have leftovers!!
