omlettes, egg burgi, egg fry, roast, egg masala, white dossa, i can do many experiments wit eggs but i succeed in this few. i like eggs.

we eat a lot of eggs. egg salad, omlettes, and i take two brown eggs and min with sour cream and beat them together, and dip pork chops or chicken in it, and fry or bake the meat. it makes a wonderful tasting crusty coating.

Besides using in cakes and cookies, eggs work well as glue to keep coating on fried foods.

We make a few things with eggs..
I like to make egg salad sandwiches
EGG SALAD SANDWICH SPREAD
3 eggs
2 sticks celery
1 tbsp. pickle relish
4 tbsp. mayonnaise
1 tbsp. mild mustard
Hard boil the eggs. Allow them to cool, then peel and chop them finely. Chop the celery finely. Combine the eggs and celery in a mixing bowl. Add the pickle relish, mayonnaise and mustard and mix well.

Deviled Eggs
INGREDIENTS:
7 hard-cooked eggs
2 tablespoons mayonnaise
1 scant teaspoon prepared mustard
salt and pepper
paprika, optional
6 pimiento stuffed olives, cut in half crosswise
PREPARATION:
Cut 6 of the hard cooked eggs in half lengthwise. Scoop yolks out of egg halves. Press yolks and remaining whole hard cooked egg through a sieve into a small bowl. Stir in mayonnaise and mustard; season to taste with salt and pepper.
Sprinkle with a little paprika, if desired, and top each deviled egg half with an olive half, cut side up. Makes 12 deviled egg halves.

Ranchero Omelet
1/2 cup refried beans
1/4 cup salsa, divided
2 eggs
2 tablespoons water
2 tablespoons shredded cheddar cheese
In small saucepan over low heat, stir together beans and 2 tablespoons of the salsa. Heat and stir thoroughly. In small bowl, beat together eggs and water. Coat a 7 to 10-inch skillet with cooking spray. Heat over medium-high heat. Pour in egg mixture. With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface. Cook until tip is thickened and no visible liquid egg remains. Spread hot bean mixture done center of omelet. Sprinkle with cheese. With pancake turner, fold sides of omelet over beans and cheese. Slide onto plate and pour remaining salsa on top.
