Please help me, I have lots of coconut shreddings that was used to extract coconut milk. What shall I do with it? Can I use it on food again?

What we are doing for the shreded coconut is that we are putting it in our rice cake as a toppings. That's how we used it so that we can also eat it.

Hi
You can certainly use your coconut shredding to make delicious dry chicken, what we call as chicken sukka here in India. It is a spicy chicken recipe and here's how to do it. You will need one cup of dried coconut shredding for this recipe:
Ingredients:
Chicken – 800 gm
Ginger garlic paste – 2 Tbsp
Lemon juice – 1 Tbsp
Cooking oil – 4 Tbsp
Fresh coriander leaves, finely chopped – 2 Tsp
Salt to taste
For masala:
Dry red chilies, whole – 6
Green chilies – 2
Cumin seeds – 1 Tsp
Peppercorns – 6
Cloves – 3
Cinnamon – 2 sticks
Sesame seeds – 3 Tsp
Green cardamom – 3
Coriander seeds – 2 Tsp
Dry coconut shredding – 1 cup
Garlic cloves – 8
Ginger – ½ inch
Onion, medium sized, finely chopped – 2
Mustard seeds – 2 Tsp
Turmeric powder – 1 Tsp
Method of preparation:
1. Roast all the spices one by one. Roast the coconut till golden brown.
2. Grind all the spices and coconut into paste along with ginger and garlic.
3. Clean the chicken and marinate it with ginger-garlic paste, lemon juice, salt and half of the ground masala for upto 2 hours.
4. Pressure cook the chicken with three cups of water for about 8-10 minutes.
5. Once the pressure is released, leave to cook open till the remaining moisture dries up.
6. Heat oil in a pan and sauté onions till golden brown.
7. Add the masala paste and cook till the oil separates.
8. Add chicken and sauté till the spices mix well together.
9. Serve hot, garnished with chopped coriander leaves.

Coconut can be added to a lot of things. You might want to search for recipes including coconut. There are recipes for coconut shrimp and coconut chicken and a lot of cookies, bars, cakes, pies, etc. that can use the coconut. If you have a lot of the coconut, it can be put into Ziploc type bags and frozen for future use.

When I have so many coconut shreddings like during All Saints' Day and New Year's Day, when we cook lots of local delicacies, I took some of them and use them as body scrub and expoliator, but be careful not to get them into your bathroom drain or it will stuck in there. Another is I give it to a neighbor who is raising pigs, he said that he add it to its feeds.

It's not a big problem. If you have too much of coconut shreddings you should sell it for you to gain extra money and to minimize your coconut shreddings

I'n not sure you can do much with it since you sqeezed all the juice out. Well one thing I can think is use it as a topping if ever you are gonna make rice cakes :D
