My Dad was a cheesemaker

My Dad was a cheesemaker some years ago. I live in Wisconsin and he shipped cheese all the way to California. It is difficult for me to to eat cheese without comparing it to the cheese my Dad made. The majority of the cheese I have tasted does not compare to my Dad's cheese. If I had the choice, I would love to work in a cheese factory. It would bring back many wonderfull memories, which I would appreciate at this point in my life. I can remember the guys working with the recently turned curd like cheese in the stainless steel vat. It has been so many years ago, but I'll bet I could write down exactly how cheese was made. My Dad made cheddar which he aged 3-4 years. He also made colby which was good but not my favorite. My Dad did not make brick or limburger, but it is one of my favorite cheeses - even though it smells really bad.

That is very interesting. You had experiences that the average childhood does not encompass. I thought all cheeses smelled bad while in the production stage. I recently saw a recipe for making a simple cheese at home right in the kitchen. I don't eat much cheese because of its effect on my digestion but I do enjoy a grilled cheese sandwich occasionally.

I love cheese, haha. Cheddar is one of my favorites! It must have been nice having homemade dairy all the time. :) Well, if you want to be a cheesemaker, why not pursue it? Even as a hobby?
