Pasta is a loved dish for any kid. And you can teach them to like veggies by making a spinach and cream sauce (just blend it and add salt) with plenty of parmsan cheese as tpping. You will get there a healthy meal with proteins, carbohidrates and veggies. If you are not into crem, use some milk instead.

I think most kids like noodles and other pastas. On hot days, I like to fix a cold pasta salad. There are a ton of variations of this limited only by your imagination. There are few things that are not good cold. And they are quick to prepare as well. Another idea would be to make some stir-fry meals. These are made quickly and do not require heating up the kitchen for great lengths of time. Fresh vegetables and thinly sliced meats take very little time when stirred together with a bottled sauce. Tacos would be another quick meal. About the only thing that needs to be heated for a simple lettuce, tomato, and meat taco would be the meat. Again, slice thinly and stir-fry. I find the internet most useful when trying to come up with ideas for a new menu. I'm sure if you searched for cool meals for hot days, you would be presented with many and varied ideas.

On hot days something quick and easy is the best to make. I usually make it a taco night. I buy a bag of popcorn shrimp and heat them in the oven for about 5 minutes before I put the shells to heat. Add some cheese and sour cream and there you go. My girls don't normally like salad but I either have them eat a small salad as a side or I add lettuce and tomatoes in their tacos. This is a fun night because they like helping me make dinner on these nights!
