What kind of veggies do you love to eat / enjoy cooking?

I'm always trying to eat more veggies but it's so difficult with a picky husband and kids. My 15 year old son and I are the only ones who enjoy eating any type of vegetables. My husband and youngest son will only eat one piece of brocoli and fried okra.
My 15 year old and I love brocoli, cauliflower, brussel sprouts and okra but I'm the only one who loves water cress. I love cooking oven baked cauliflower with olive oil and a little salt and pepper, sometimes I fry it or boil it. I recently tried baking some squash, I loved it but no one else did so I haven't had it since then.
So I was wondering what kind of veggies do you love to eat or enjoy cooking? Because I would love to know if anyone knows of any other veggies that may be popular with their entire family. Do you have a special way of cooking it so that everyone finds it very tasty?

I also love okra and broccoli! I like them steamed or boiled. I also like broccoli in other dishes like beef with broccoli or pork with broccoli. I also like boiled camote tops dipped in soy sauce with lemon extracts. I eat a lot of other vegetables like bitter gourd, squash, string beans, lettuce, cabbage, and others. But when I was a kid, I hardly eat vegetables! My mother always found it difficult to make me eat them.
I'm not very fond of cooking so I cannot suggest anything to you to make your family eat more vegetables. But I guess, I cooking it in a way that it will taste like it's not vegetable would be really helpful. Try not telling them that you're cooking a vegetable and then cook it in a way that it won't be recognizable by appearance and taste and if they liked it, then you have succeeded.

I like eating cabbage and my 10 year old nephew love them too. We cook them stir fry with no meat. Sometime we put ground pork, we just saute them and put some water to have it some sauce.

I love cabbage also, but the only ones who eat it at home besides myself, is my husband and son and only in an egg roll. I never tried it sauteed but will definitely try it. I absolutely love stuffed cabbage with rice and ground turkey.
I only make it when my mom comes to visit because she is the only one who loves it as much as I do. My kids only eat the rice and turkey and not the cabbage, they hate when I cook it because they say it smells bad. I think I could eat it everyday lol.

I love veggies. They may not be the best tasting food but if only for the nutrients I believe I should love them and should eat a lot of them. Lately though I realized I should eat more of raw veggies. Cooking destroys some of the nutrients even if only half cooked and if overcooked all the nutrients will surely be destroyed so the veggies do not serve the good purpose at all. So as for me I've resolved to eat more of raw veggies as much as possible so my current favorites are lettuce, radish, cucumber, celery, green peppers, green tomatoes, carrots and all veggies that can be eaten raw.

Yes at first I only ate them because I knew they were good for me, but now I actually have grown to like the way they taste. I know cooking them does take away some of the nutrients, so I also eat some raw.
I used to eat raw brocoli and cauliflower it was very tasty with italian dressing. Then I stopped because I read about pesticides and how you need to wash your veggies really well, especially if they are to be eaten raw.
Seeing how I couldn't scrub brocoli and cauliflower clean without breaking them, I only eat them raw whenever my budget allows me to buy them organic.

i love broccoli, sauteed with garlic; or with oyster. i also like eggplants especially if they are cooked with cheese. hehe i love eggplant casserole. other veggies that i would like to be served to me is tofu. =)
im not a fan of leafy vegetable that much...

My family likes about any vegetable. We love corn on the cob and zucchini. With zucchini I usually steam it and then put butter on it. The whole family loves it that way. I also love it dipped in egg and flour and then fried in butter. Yummy! We like broccoli and cauliflower too. They usually like it with butter and salt but sometimes we'll do it with cheese on and they like that a lot too.

I like most vegetables and enjoy them in various processes. I think introducing vegetable is always difficult. The best is to go for the flavour neutral vegetable, or things that they may enjoy. Tomato is a great , because it disguises well as a vegetable, in a salad, in food or as a side dish it is generally accepted.

I like eating some vegetables but not others. I don't have any problem with my husband regarding vegetables but like me, our son is also picky when it comes to eating vegetables. I like eggplants, string beans and cabbage while my son likes okra, string beans, egg plants and sayote.

I haven't had eggplants in I don't know how many years, but I love the fried breaded eggplants, also like string beans and cabbage, but no one at home will eat it besides me, so I don't cook them. I don't think I've ever heard of sayote.
I also like asparagus and that's probably the only one my husband eats the most.

It's been such a long time since I had it. I think I will go to the produce market today and will buy some eggplant and some other veggies and just have an all vegetable dinner
Hmmm... that may be a bit difficult. Perhaps I'll just make it for myself, and slowly try to introduce my kids to it.

I like Mushrooms and its one of my favorite to eat. I find them yummy and good to eat. I do like others like brocolo or greenbeans and also i do like corn too but not sure if its a vegetable or startch. Umm im not a fan of any other vegetables but am pretty good when it comes to different ones and trying ones. I like fried green beans as those are really yummy and then i do like summer squash, butternut squash, acorn squash and not sure what else but like alot of things to eat. Vegetables are good for you to eat and are healthy as well.

I have eaten mushrooms before, but it's probably the only veggie that I'm not so fond of. I've never had fried green beans but I will try it, hopefully my kids will like it.
I'm not sure which squash I tried, I think it was the butternut, I know I definitely have a lot more to try.

i too love to eat vegetables and i do. but recently i joined gym my coach said me to eat meat also..so nowadays im looking forward to have some meat in my plate..but i like all vegetables.

I eat some meats also. I read somewhere that the meat helps to build muscles. I wonder, why can't the vegetables do that as well? I know they are very healthy especially the dark colored ones, but I guess they can't help one to build muscles as much as meats do.

my family loves vegetables in whatever form they are going.
whether they are raw or cooked in any dish.
maybe I'm lucky in that respect and do not worry.
maybe you should do them just as your family loves them not to feel frustrated.

Yes you are very lucky, I would love for my family to eat all types of veggies. I do try to make them in their favorite way but they don't like to eat them very often. I like to eat them everyday so I usually have plenty left over for the following day, I feel like I only make them just for me.
